FROZEN MOCHA CHEESECAKE
Steps:
- In a small bowl combine crumbs, sugar, and butter. Pat crumbs firmly on bottom and up sides of a 9 inch springform pan. Alternately, use a 13 X 9 inch baking dish. Chill. In a large bowl beat cream cheese until fluffy; add Eagle Brand milk and hotfudge sauce. In a small bowl dissolve coffee in water; add to Eagle Brand mixture. Fold in Cool Whip. Pour into prepared pan. Cover and freeze 6 hours or until firm. Garnish with additional chocolate crumbs if desired. Return leftovers to freezer.
Tips:
- Prepare the Crust: Use a food processor to combine the graham crackers, sugar, and melted butter until it resembles coarse crumbs. Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate the crust while you prepare the filling.
- Soften the Cream Cheese: Ensure the cream cheese is softened to room temperature before mixing. This will help it blend smoothly and avoid lumps in the filling.
- Chill the Cream: Before whipping the cream, place the bowl and the beaters in the freezer for about 15 minutes. This will help the cream whip up faster and hold its shape better.
- Add Coffee Properly: When incorporating coffee into the filling, add it gradually and taste as you go. This will help you adjust the coffee flavor to your preference.
- Freeze the Cheesecake: After assembling the cheesecake, freeze it for at least 6 hours or overnight. This will allow the filling to set and the flavors to meld.
- Thaw the Cheesecake Properly: To thaw the cheesecake, remove it from the freezer and place it in the refrigerator for 4-5 hours before serving. This will prevent the cheesecake from becoming too soft and losing its shape.
