FRUIT COBBLER
This is a fantastic American recipe equivalent to our crumble. It's particularly good with strawberries and rhubarb, but you can use any fruit combo you like; about 680g/1 1/2 pounds of fruit should do it.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C/gas 5). Put the fruit into a pan with the sugar and the balsamic vinegar. Put the pan over the heat, and cook gently, until the juices begin to run from the berries. Pour into an ovenproof dish.
- Meanwhile make the topping. Rub the cold butter into the flour until the mixture resembles fine bread crumbs. Add the sugar and salt, stir well, and then add the buttermilk to form a loose, scone-type mixture. Roll balls of the dough and place randomly over the hot fruit. Sprinkle with a little sugar, and bake in the oven for 30 minutes until golden brown. Serve with vanilla ice cream.

Steps:
- Mix first 4 ingredients together and set aside.
- Place drained fruit in a buttered 8x8 pan and top with bread strips.
- Pour sugar mixture over bread and fruit and sprinkle with cinnamon if desired.
- Bake at 350 degrees for 35-45 minutes or until golden brown.
- Great topped with ice cream or whipped cream on top.
- Note: I dont usually measure the fruit, I just fill the bottom of the pan. Frozen fruit that has been partially defrosted works great as does soft fresh fruit- harder fruits such as apples or pears should be precooked until softened for best results. Drained canned fruit works great for this too. One large can (29 oz) is a perfect amount.

Tips:
- Select Fresh and Ripe Fruits: Use a variety of fresh, ripe fruits for the best flavor and texture. This creates a vibrant and flavorful fruit filling.
- Use a Variety of Fruits: Combine different fruits to create a unique and delicious cobbler. Some popular combinations include apples, peaches, blueberries, and cherries. Experiment with different fruits to find your favorite blend.
- Adjust the Sweetness: Taste the fruit filling before adding sugar. Some fruits, like cherries, may be naturally sweet and require less additional sugar. If using tart fruits, add more sugar to balance the flavor.
- Choose the Right Pan: Select a baking dish that is large enough to hold all the ingredients without overcrowding. A 9x13 inch baking dish is a good option.
- Create a Thick and Flavorful Cobbler Topping: The topping should be thick enough to hold its shape and provide a crispy crust. Use a combination of flour, sugar, butter, and baking powder to create a light and flaky topping.
- Serve Warm with Desired Accompaniments: Serve the fruit cobbler warm with a scoop of vanilla ice cream, whipped cream, or a drizzle of caramel sauce. These accompaniments add an extra layer of flavor and richness.
