Like Capital-One, I don't leave home without it. For family or church gatherings, there's always a couple of requests for this oh-so-easy salad/dessert. Be mindful, though...it really freezes up and does take some time to thaw out enough to enjoy the full-bodied flavor. After all the times I've made it, though, I almost always forget to bring it out early as a salad. Sooo, once the meal is over I present it as dessert!!

1 (16 ounce) jar maraschino cherries, drained
1/4 cup cherry juice
1 (8 ounce) package cream cheese, softened
1 (20 ounce) can crushed pineapple
1 (11 ounce) can mandarin oranges, drained
2 1/2 cups mini marshmallows
1 (8 ounce) container whipped topping

Steps:

  • Drain cherries, reserving 1/4 cup juice; set aside.
  • Combine cream cheese and pineapple with juice in medium bowl; mix on medium speed 3-4 minutes.
  • Stir in oranges, cherries, and cherry juice.
  • Gently fold in marshmallows and whipped topping.
  • Spread evenly in 13x9x2 baking pan.
  • Freeze until set.
  • Can be made one day ahead.

1 can (20 ounces) pineapple chunks, drained
1 can (15-1/4 ounces) sliced peaches, drained and cut into bite-size pieces
1 can (11 ounces) mandarin oranges, drained
3 bananas, sliced
2 unpeeled red apples, cut into bite-sized pieces
FRUIT SAUCE:
1 cup cold whole milk
3/4 cup sour cream
1/3 cup thawed orange juice concentrate
1 package (3.4 ounces) instant vanilla pudding mix

Steps:

  • In a large bowl, combine fruits; set aside. Whisk sauce ingredients until smooth. Gently fold into fruits. Cover and chill for 3-4 hours before serving.

1 egg
1/4 cup sugar
1 tablespoon lemon juice
2 teaspoons butter
1 can (8 ounces) pineapple chunks, drained
1/2 cup green grapes
1/2 cup fresh orange pieces
1/2 cup pastel miniature marshmallows
1/2 cup heavy whipping cream
1 tablespoon confectioners' sugar

Steps:

  • In a small saucepan, combine the egg, sugar, lemon juice and butter; cook and stir over low heat for 5-7 minutes or until thickened. Cool. , Meanwhile, combine the pineapple, grapes, oranges and marshmallows in a small bowl; set aside. In a small bowl, beat cream and confectioners' sugar until soft peaks form. Fold into fruit mixture. Add cooled dressing. Chill for at least 1 hour.
