SIMPLY OVEN BAKED PORK CHOPS AND RICE

Simply Oven Baked Pork Chops and Rice image

This is DH's recipe. It is simple comfort food and is very versatile. You can use chicken quarters in place of chops or chicken broth in place of water. Feel free to experiment with different herbs. We never make this the same way twice. A side note: I would recommend using a bone in, fattier cut of pork and not loin chops in this recipe.

6 boneless pork chops ((½ inch thick))
salt and pepper, to taste
2 Tablespoons olive oil
1¾ cups chicken broth
8 ounces tomato sauce (1 can)
4 ounces diced green chilies (1 can)
1.25 ounces taco seasoning (1 packet)

Tips:

  • To ensure the pork chops are cooked evenly throughout, use a meat thermometer to check their internal temperature. The chops should reach an internal temperature of 145 degrees Fahrenheit (63 degrees Celsius) for medium-rare, 155 degrees Fahrenheit (68 degrees Celsius) for medium, and 165 degrees Fahrenheit (74 degrees Celsius) for well-done.
  • If you don't have a meat thermometer, you can also check the doneness of the pork chops by cutting into one of them. The juices should run clear, with no pink in the center.
  • To prevent the rice from sticking to the pot, make sure to rinse it thoroughly before cooking. You can also add a little bit of oil or butter to the pot before adding the rice.
  • If you want to add more flavor to the rice, you can cook it in broth instead of water. You can also add herbs, spices, or vegetables to the rice while it's cooking.
  • To ensure the fruit topping is evenly distributed, add it to the pork chops in the last few minutes of cooking.

Conclusion:

Fruit-topped pork chops and rice is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The pork chops are juicy and flavorful, and the fruit topping adds a sweet and tangy contrast. The rice is fluffy and absorbent, and it pairs perfectly with the pork chops and fruit. This dish is sure to be a hit with your family and friends.
