Time 45m

Yield 6 serving(s)

Number Of Ingredients 11

500 g tiny new potatoes, washed well, but not peeled
4 chicken thigh fillets
4 slices bacon
2 tablespoons oil
2 avocados, peeled and sliced
2 teaspoons lemon juice
2 cups mixed lettuce leaves
1/4 cup olive oil (or mix half and half olive and vegetable)
2 tablespoons white wine vinegar
2 tablespoons chopped fresh herbs
salt and pepper

Steps:

  • Boil potatoes until just tender, 15-20 minutes.
  • Drain and cool.
  • Slice chicken and bacon into strips.
  • Heat the oil and pan-fry the chicken until cooked, remove and pan-fry bacon until crisp.
  • Drain chicken and bacon on kitchen paper.
  • Sprinkle avocado with lemon juice to prevent browning.
  • Halve the potatoes and toss in the dressing with the chicken, bacon and avocado while still warm.
  • Serve on a bed of the mixed lettuce leaves.

Tips:

  • Choose ripe and flavorful cantaloupe: A ripe cantaloupe will have a deep orange color and a sweet smell. Avoid cantaloupes that are bruised or have soft spots.
  • Use high-quality mayonnaise: A good mayonnaise will make a big difference in the taste of your chicken salad. Look for a mayonnaise that is made with fresh eggs and oil, and avoid brands that contain a lot of sugar or preservatives.
  • Don't overcook the chicken: Overcooked chicken will be dry and tough. Cook the chicken until it is just cooked through, then remove it from the heat and let it cool slightly before shredding.
  • Add some crunch: A little bit of crunch will add texture and interest to your chicken salad. Try adding some chopped celery, carrots, or nuts.
  • Season to taste: Don't be afraid to add some salt and pepper to your chicken salad. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
