This is the ultimate unusual salsa recipe. Very tasty over vanilla ice cream. You can substitute watermelon for dragonfruit if you can't find dragonfruit at your local grocer. I did not put the chopped jalepeno in because I don't do hot, but I think next time I will. This recipe was developed by the Groovy GastroGnomes for ZWT5.

1 1/2 cups acai juice
1 1/2 cups guava juice
1 cup diced pitaya (aka dragonfruit)
1 cup diced strawberry
2 kiwi, diced
2 nectarines, diced
1 teaspoon cinnamon
1 avocado, diced
1 jalapeno
1 tablespoon lime juice
1 teaspoon cornstarch

Steps:

  • De-vein and de-seed and dice the jalapeno.
  • Boil the juices withe the jalapeno until there is only about 1 cup of liquid. Add the corn starch and simmer until thickened. Remove from heat and let cool completely.
  • Mix the diced fruits together. Add the sauce, the lime juice and the cinnamon. Mix well.
  • Serve over ice cream.

SWEET FRUIT SALSA WITH CINNAMON CHIPS

2 tart green apples
1 kiwi fruit
1/2 cup red seedless grapes
1 cup fresh strawberries
1 small orange
2 tablespoons brown sugar
1 teaspoon Spice Islands® Ground Saigon Cinnamon
1/8 teaspoon Spice Islands® Ground Nutmeg
2 tablespoons apple jelly
1/4 cup sugar
2 teaspoons Spice Islands® Ground Saigon Cinnamon
10 (8-inch) flour tortillas
1 tablespoon melted butter OR margarine

Steps:

  • To prepare salsa: Finely chop apples, kiwi, grapes and strawberries and place in medium bowl. Grate orange peel to measure 1 teaspoon. Squeeze juice from orange. Add juice and grated peel to chopped fruit. Stir together brown sugar, cinnamon, nutmeg and apple jelly in small bowl. Add to fruit; toss gently to mix. Refrigerate 1 hour to mix flavors. To make cinnamon chips: Preheat oven to 400°F. Mix sugar and cinnamon in small bowl. Brush one side of tortillas with melted butter. Sprinkle cinnamon sugar mixture on tortillas. Cut each tortilla into 8 wedges (as you would a pie) and place on ungreased cookie sheet. Bake for 5 minutes, or until golden. Cool. Recipe Tip: substitute 1-¼ teaspoons Jamaican jerk seasoning for cinnamon and nutmeg in the salsa.

2 medium granny smith apples, chopped
2 teaspoons lemon juice
1 cup fresh strawberries, chopped
3 medium kiwi, peeled and chopped
1 small orange
2 tablespoons brown sugar
2 tablespoons apple jelly, melted
8 8-inch flour tortillas
water
1/4 cup granulated sugar
2 teaspoons cinnamon

Steps:

  • In a large bowl, toss the chopped apples with the lemon juice.
  • Add the strawberries and the kiwi.
  • Grate about one tablespoon of orange peel (not the bitter white pith) into the fruit.
