FUNERAL CHICKEN CASSEROLE
Don't let the name of this recipe fool you! This is a winner! (It gets its name from the fact that we make it whenever someone we know has a loved one that passes away.) It doubles very easily and freezes like a breeze. You can switch your vegetables around to the ones your family likes, too. We switch them out all the time depending on what we're in the mood for.

Tips:
- Choose the right casserole dish: Use a 9x13 inch baking dish for most recipes. If you are doubling a recipe, use a larger dish.
- Cook the meat thoroughly: Ground beef, chicken, and sausage should be cooked until browned and no longer pink in the center.
- Do not overcook the pasta: Cook the pasta according to the package directions, but be careful not to overcook it. Overcooked pasta will become mushy and ruin the texture of your casserole.
- Use a variety of vegetables: Vegetables add color, flavor, and nutrients to your casserole. Try using a combination of fresh, frozen, and canned vegetables.
- Season to taste: Be sure to taste your casserole before serving and adjust the seasonings as needed.
- Top with cheese: A layer of cheese on top of your casserole will add a golden brown crust and extra flavor.
- Let it rest: Allow your casserole to rest for 10-15 minutes before serving. This will help the flavors to meld and the casserole to set.
