Number Of Ingredients 8

1 pound fusilli pasta
3 tablespoons olive oil
2 cloves garlic, minced
3 cups cherry tomatoes, quartered (about 1 1/2 pints)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper

8 ounces fresh mozzarella, diced (about 1 1/4 cups)

1 pound fusilli pasta
3 tablespoons olive oil
2 garlic cloves, minced
3 cups cherry tomatoes, quartered (about 1 1/2 pints)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup packed fresh basil leaves, torn
8 ounces fresh mozzarella, diced (about 1 1/4 cups)

  • Meanwhile, heat the olive oil in a medium skillet over medium heat. Add the garlic and sauté until fragrant, about 2 minutes. Add the tomatoes, salt, and pepper. As the tomatoes cook and soften, smash them with a fork. Continue to cook until the tomatoes make a chunky sauce, about 4 minutes. Add the tomato sauce to the bowl with the pasta and toss to combine. Stir in the basil leaves and mozzarella, then add the reserved pasta water, 1/4 cup at a time, until the pasta is moist. Serve.

Tips:

  • Use Fresh Ingredients: The quality of your ingredients will significantly impact the flavor of your dish. Choose fresh, ripe tomatoes, basil, and mozzarella cheese for the best results.
  • Don't Overcook the Pasta: Fusilli pasta should be cooked al dente, meaning it should have a slightly firm bite to it. Overcooked pasta will be mushy and bland.
  • Use a Good Quality Olive Oil: Olive oil is a key ingredient in this dish, so it's important to use a good quality extra virgin olive oil. This will add a rich, fruity flavor to the pasta.
  • Season the Pasta Water: When cooking the pasta, be sure to season the water with salt. This will help to flavor the pasta as it cooks.
  • Don't Crowd the Pan: When cooking the pasta, don't crowd the pan. This will prevent the pasta from cooking evenly. Cook the pasta in batches if necessary.

Conclusion:

Fusilli alla Caprese is a delicious and refreshing pasta dish that is perfect for a summer meal. It is easy to make and can be tailored to your own taste preferences. With its vibrant colors and fresh flavors, this dish is sure to impress your family and friends.
