GARDEN FRESH SPAGHETTI SAUCE

Garden Fresh Spaghetti Sauce image

Made from fresh San Marzano tomatoes from the garden. This sauce is great when served over hommade pasta.

Provided by kelly

Time 5h

Yield 2 quarts, 6 serving(s)

Number Of Ingredients 9

2 tablespoons olive oil
24 san marzano tomatoes
1/2 onion
4 garlic cloves
1 teaspoon oregano
1 teaspoon basil
1/4 cup red wine
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • blanch and peal the tomotoes. I leave the seeds in as they are small in this type of tomato.
  • 1/2 and run the tomatoes through a food processor or blender.
  • Saute onion and galic in the olive out.
  • Add red wine.
  • Add tomato sauce from step 2.
  • Add oregano, basil, salt and pepper.
  • Let simmer. The length of time will depend on how thick you want the sauce.

Tips:

  • Use fresh vegetables: This recipe shines when you use the freshest vegetables possible. Look for tomatoes that are ripe and juicy, zucchini that is tender and crisp, and basil that is fragrant and flavorful.
  • Don't overcrowd the pan: When cooking the vegetables, be sure to give them enough space in the pan so that they can cook evenly. If you overcrowd the pan, the vegetables will steam instead of sautéing and they won't develop their full flavor.
  • Season the vegetables well: Don't be afraid to season the vegetables generously with salt and pepper. This will help to bring out their natural flavors.
  • Cook the pasta al dente: Al dente means "to the tooth" in Italian, and it refers to the ideal texture for cooked pasta. It should be tender but still have a slight bite to it.
  • Use a flavorful cheese: The cheese you use in this recipe will make a big difference in the final flavor. Choose a cheese that is strong and flavorful, such as Parmesan or Asiago.
  • Garnish with fresh herbs: Before serving, garnish the pasta with fresh herbs, such as basil or parsley. This will add a pop of color and flavor.

Conclusion:

This garden-fresh spaghetti recipe is a delicious and easy way to enjoy the flavors of summer. It's perfect for a weeknight meal or a special occasion. With its vibrant colors and fresh flavors, this dish is sure to please everyone at the table.
