½ cup thinly sliced carrots
2 stalks celery, chopped
½ cup chopped green bell pepper

2 (16 ounce) bottles Italian-style salad dressing
½ cup grated Parmesan cheese

Steps:

  • Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.

It doesn't HAVE to be refrigerated overnight, the only time I do that is just for my convienience. Amounts on salad ingredients may be adjusted or left out according to what you like. 1 pound whole-wheat fusilli pasta
2 tablespoons extra-virgin olive oil
1 bulb fennel, cored and thinly sliced (about 1 1/2 cups), fronds reserved
3 cups baby kale
2 cups snow peas, trimmed and halved on the bias
1 cup thinly sliced radishes
Freshly cracked black pepper
Handful edible flowers, optional
1 cup jarred roasted red bell peppers or sweet red peppers
2 tablespoons sherry vinegar
1 teaspoon sugar
1/2 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
2 cloves roasted garlic, recipe follows, peeled
1/4 cup extra-virgin olive oil
1 head garlic, cloves separated, unpeeled

Steps:

  • For the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions. Drain and transfer to a bowl. Toss with 1 tablespoon of the olive oil. Set aside.
  • For the dressing: Meanwhile, add the peppers, vinegar, sugar, salt, black pepper and roasted garlic to the carafe of a blender. Turn the blender to high and blend until the peppers are pureed and the ingredients are incorporated. Once the mixture is smooth, reduce the speed to low. Remove the cap inside the blender top and slowly drizzle in the olive oil to emulsify the mixture into a thick and shiny dressing.
  • Pour the dressing over the warm pasta. Add the sliced fennel and toss to combine. Pour into a serving dish.
  • In a large mixing bowl, add the spring vegetables: the baby kale, snow peas, radishes and 1/4 cup of the fennel fronds. Drizzle with the remaining tablespoon olive oil and sprinkle with salt and pepper. Gently toss, then place in a mound over the dressed pasta mixture in the serving dish. Garnish with edible flowers if using.
  • Preheat the oven to 400 degrees F.
  • Wrap the garlic cloves in aluminum foil. Roast until tender, about 45 minutes. Let cool. Refrigerate the cloves in an airtight container. Peel right before using.

Steps:

  • Cut the squash and zucchini into thin quarter rounds. Thinly slice the red onion. Peel and then grate the carrots using a box grater or large holed cheese grater. Roughly chop the fresh parsley. Place all of these vegetables in a large bowl. You can also add the broccoli if you want it raw, or proceed with the steps below for blanched (lightly cooked) broccoli. Bring a large pot of water to a rolling boil. Add the pasta and let it continue to boil for 7-10 minutes, or until al dente. While the water is boiling, cut the broccoli crown into small pieces. Add the broccoli pieces to the boiling water with the pasta for the last 60 seconds of cooking. Drain the pasta and broccoli in a colander and rinse briefly with cool water to stop the broccoli from cooking and cool off the pasta. Let them drain really well. While the pasta is cooking, make the creamy dressing by whisking together the buttermilk, mayonnaise, garlic powder, salt, freshly cracked pepper, and lemon juice. Once the pasta has cooled and is very well drained, add it to the bowl with the vegetables. Pour the dressing over top and stir to combine. Serve immediately or refrigerate until ready to eat. Notes The only difference between this updated recipe and the original is the addition of ¼ tsp of salt and 1 Tbsp of lemon juice to the dressing.

1-1/2 lb boneless chicken breast cooked and cubed
1/2 small red onion-finely diced
1 medium green zucchini- sliced and quartered
1/2 lb asparagus, fresh. cut into bite-size pieces
1 lb dry spaghetti
1 pt grape tomatoes-cut in half
ranch dressing

Steps:

  • 1. Cook Chicken and cube into bite-sized pieces. set aside.
  • 2. Cook Broken in half Spaghetti pasta until al Dente'. Drain and rinse with Cold water. Set aside. If noodles start to stick together, drizzle w/ a little Olive oil and toss.
  • 3. Blanch both Zucchini and asparagus for 5 min. or until crisp tender. Drain and set aside to drain. Add to a Large re sealable container. Add in pasta. Toss together.
  • 4. Cut grape in half. Add to container or bowl. Toss again. Dice red onion too. Add Ranch dressing. Toss to coat well. Chill 2 hours before serving.

1 1/2 cup mostaccioli
3 Tbsp. tarragon vinegar
2 Tbsp. oil
1 tsp. fresh dill weed
3/4 tsp. salt
1/4 tsp. dry mustard
1/8 tsp. pepper
1 small garlic clove, minced
1 cup (1 medium) chopped tomato
1 cup (1-2) medium sliced zucchini
1 cup pitted ripe olives
1/4 cup sliced green onions

Steps:

  • Cook the mostaccioli, drain and rinse under cold water. In a small bowl, combine the vinegar, oil, dill weed, salt, mustard, pepper and garlic. In a large bowl combine the cooked mostaccioli, tomato, zucchini, olives and onions. Pour dressing over salad mixture, toss well to combine ingredients. Cover and refrigerate at least 1 hour to blend flavors.

1/2 cup ranch dressing
1/2 teaspoon dried dill weed
1 1/2 cups small broccoli florets
1/2 cup thinly sliced red bell pepper, cut into bite-size strips
1/2 cup cucumber slices, halved
4 medium green onions, sliced (1/4 cup)

Steps:

  • Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • Drain pasta; rinse with cold water. Shake to drain well.
  • In medium bowl, mix seasoning mix, dressing and dill weed. Stir in pasta and remaining ingredients. Store any remaining salad covered in refrigerator.

1 bunch asparagus, trimmed
1/4 cup water
1 pint cherry tomatoes, quartered
1 cup yellow bell pepper, chopped
1/4 cup shallots, thinly sliced
1 tablespoon fresh dill, minced

Steps:

  • In a large bowl, whisk together vinegar, olive oil, mustard, salt, pepper and celery seed; stir in cooked pasta. In a shallow microwave-safe dish, combine asparagus and ¼ cup water.
