2 cups julienned zucchini
1/2 pound fresh mushrooms, sliced
1 medium onion, cut into wedges

1 tablespoon cornstarch

1 tablespoon cold water
1/4 teaspoon garlic powder
Hot cooked rice

Steps:

  • In a large skillet or wok coated with cooking spray, stir-fry the pork until no longer pink, about 4 minutes. 1 ½ cups white rice
3 cups chicken stock
1 tsp salt
1 pound pork cutlets (Horsely Farms meats)
2 T dijon mustard
1 T fresh ginger (grated)
1 T soy sauce
½ tsp salt
¼ tsp pepper
3 T coconut oil
1 medium onion (sliced)
3 small carrots (sliced)
1 bunch kale (chopped finely)
¼ head red cabbage (sliced thinly)
1 c broccoli (chopped)
¼ pound asparagus (cut in small chunks)
2 c snow peas (cut into small pieces)
2 cloves garlic (crushed)
1 tsp salt
½ tsp pepper
¼ c soy sauce

Steps:

  • Mix chicken stock, 1 tsp salt and rice in rice cooker and cook until done.
  • Slice pork cutlets into thin strips. Mix pork cutlets, mustard, ginger, 1 T soy sauce, ½ tsp salt and ¼ tsp pepper in a bowl and set to the side.
  • Heat coconut oil in skillet on high heat. When oil starts to ripple, add meat mixture and spread into a single layer. Let cook until browned and turn meat over. Brown on second side and remove from skillet.
