WARM OR COLD POTATO GARDEN SALAD
Really really tasty when warm and also yummy cold! You can half the recipe easily or double it! Haricot vert is French for green beans. Haricot meaning beans and vert meaning green. French green beans are longer and thinner than most American varieties. They are also more tender and have a more complex flavor. For the most part, they are interchangeable with American green beans which are also called string beans or snap beans. If you are unable to find haricot verts, substitute with the thinnest young green beans you can find. Made for the CrazeE contest 2009

Tips:
- Fresh Herbs: Use fresh herbs such as dill, chives, or parsley to add a burst of flavor to your potato salad.
- Acid Balance: To balance the richness of the mayonnaise, add some acidity with lemon juice or vinegar. A touch of Dijon mustard can also help brighten the flavors.
- Variety of Potatoes: Don't be afraid to use different types of potatoes for a more complex texture. Fingerling potatoes, baby potatoes, or new potatoes all work well.
- Boil Potatoes Properly: Boiling the potatoes until they are just tender is essential. Overcooked potatoes will become mushy and fall apart.
- Cool Potatoes Completely: Before adding the dressing, make sure the potatoes are completely cool. This will prevent the mayonnaise from becoming oily.
- Make Ahead: Potato salad is a great make-ahead dish. It can be prepared up to a day in advance and stored in the refrigerator.
Conclusion:
Garden potato salad is a classic summer dish that is easy to make and always a crowd-pleaser. With its fresh ingredients and creamy dressing, it's a perfect side dish for any barbecue or picnic.
