2 pounds medium-size Yukon gold potatoes, peeled and diced
6 tablespoons unsalted butter, at room temperature
2 cloves garlic, peeled
1 tablespoon plus 1 teaspoon kosher salt
1/4 to 1/2 cup half-and-half, at room temperature
2 small lemons, zested
2 1/2 teaspoons chopped fresh chives
2 1/2 teaspoons chopped fresh Italian parsley
2 1/2 teaspoons chopped fresh thyme

  • For the potatoes: Place the potatoes, 2 tablespoons of the butter, garlic and 1 tablespoon salt in a large saucepan. Add enough cold water to cover the potatoes by 1 inch. Bring to a boil over medium-high heat. Simmer until tender, 15 to 20 minutes. Remove the garlic cloves. Drain the potatoes in a colander. Place the potatoes back into the saucepan. Add the remaining 4 tablespoons butter and the half-and-half. Using a hand masher, mash the potatoes until smooth. Stir in the zest, chives, parsley, thyme, the remaining1 teaspoon salt and 1/2 teaspoon pepper. Keep warm over low heat.
  • For the shrimp: In a medium nonstick skillet, heat the butter over medium-high heat. Add the shrimp and sprinkle with the salt and pepper. Cook until the shrimp are cooked through, about 3 minutes. Using a slotted spoon, remove the shrimp and set aside. When cool enough to handle, chop the shrimp into 1/2-inch pieces. GARLIC BUTTER SHRIMP

Garlic Butter Shrimp image

Easy and delicious. I had this recipe for years, lost it, and just recently found it on the internet. It's the best tasting shrimp I've ever had.

Provided by Peg 4

Categories     European

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 6

2 lbs uncooked deveined large shrimp
1/2 cup butter
1/2 teaspoon salt
3 crushed garlic cloves
1/4 cup chopped fresh parsley
2 teaspoons lemon juice

Steps:

  • Preheat oven to 400 degrees. Remove shells from shrimp if they are still on. Pat dry shrimp on paper towels, if they're at all wet, the sauce will be runny.
  • Place butter in a large glass baking dish and place in the oven for 5 minutes. Take it out and add salt, garlic, and 1 tbsp of the parsley. Stir it up and then place shrimp on top of this butter mixture in a single layer. Bake this for another 5 minutes, uncovered.
  • Remove the dish from oven, turn over each shrimp, sprinkle with the lemon juice and the remaining parsley. Return it to the oven and bake it for an additional 8 minutes.

Tips:

  • Use fresh shrimp: Fresh shrimp has a more delicate flavor and texture than frozen shrimp.
  • Peel and devein the shrimp: This will help to remove any grit or sand from the shrimp.
  • Marinate the shrimp: Marinating the shrimp in a mixture of olive oil, garlic, butter, and spices will help to infuse them with flavor.
  • Cook the shrimp properly: Shrimp should be cooked quickly over high heat. Overcooking will make them tough and rubbery.
  • Make sure the mashed potatoes are creamy and smooth: Use a potato ricer or food processor to achieve a smooth consistency.
  • Add plenty of butter and milk to the mashed potatoes: This will help to make them rich and creamy.
  • Season the mashed potatoes to taste: Add salt, pepper, and garlic powder to taste.

Conclusion:

Garlic butter spice shrimp with mashed potatoes is a delicious and easy-to-make meal that is perfect for any occasion. The shrimp are succulent and flavorful, while the mashed potatoes are creamy and smooth. This dish is sure to please everyone at your table.
