Edamame are green soybeans that can be found already shelled in many supermarket freezer sections. 2. For fresh crunch, stir in a handful of bean sprouts when adding the green onion. 3. Substitute cubed pork loin for the chicken. 4. Substitute shrimp or cubed, firm tofu for the chicken; simply add along with the vegetables and edamame. 5. Prepare rice ahead; freeze in zip-top (re-sealable) bags until ready to use. 6. To reduce the salt content of this recipe, use lite or sodium-reduced soy sauce.

Tips:

  • Use day-old rice: Day-old rice is less moist and will fry better, resulting in a fluffier texture.
  • Chop your vegetables evenly: This will ensure that they cook evenly and at the same time.
  • Use a large wok or skillet: This will give you enough space to stir-fry the rice and vegetables without overcrowding them.
  • Cook the rice in batches if necessary: If you have a small wok or skillet, you may need to cook the rice in batches. Just make sure to keep the cooked rice warm while you cook the rest.
  • Don't overcook the rice: The rice should be cooked through but still have a slight bite to it.
  • Add the vegetables and protein towards the end of cooking: This will prevent them from overcooking.
  • Season to taste: Add soy sauce, oyster sauce, and other seasonings to taste.
  • Serve immediately: Garlic chicken fried rice is best served hot and fresh.
