Categories     Appetizer     Main Course

Time 15m

Number Of Ingredients 11

1 to 1 1/4 pound dry sea scallops
Salt and ground black pepper
2 tablespoons olive oil
3 tablespoon butter (divided)
2 garlic cloves (finely minced)
1/4 cup white wine or broth
1/4 cup chicken broth
2 tablespoon fresh lemon juice
1 tablespoon capers (drained)
2 tablespoons parsley (chopped)
Lemon slices or lemon wedges for serving

Steps:

  • Remove the side muscle from the scallops (if still attached).
  • Pat dry the scallops thoroughly with paper towels.
  • Season the scallops with salt and pepper.
  • In a large sauté pan or skillet, heat the olive oil over medium-high heat until sizzling. Add the scallops in a single layer. You may need to do this in batches to not overcrowd the pan.
  • Lower the heat to medium and without moving them, allow the scallops to brown lightly and form a golden brown crust underneath. This should take about 2-3 minutes. Flip the scallops and brown lightly on the other side, about 2 minutes or until cooked through (they will look opaque with a golden crust). Remove scallops from the skillet and transfer them to a plate. Keep them warm.
  • Melt 2 tablespoons of butter in the same pan. Add the garlic and cook, stirring for about a minute, making sure the garlic doesn't get brown.
  • Add the wine and broth and with a wooden spoon scrape any browned bits from the bottom of the pan. Cook until the wine/broth mixture has reduced by half, about 2-3 minutes.
  • Stir in the remaining butter, lemon juice and capers and turn the heat to low.
  • Return the scallops to the pan and warm them up for about 2 minutes. Remove from the heat. Add the parsley and season to taste.
  • Serve immediately with lemon slices.

12 medium sea scallops
1 teaspoon salt, or more to taste
5 tablespoons clarified butter (ghee), warm
2 tablespoons lemon juice

3 tablespoons clarified butter (ghee)

  • At the same time, remove scallops from the refrigerator and let come to room temperature, about 20 to 30 minutes.
  • Melt 3 tablespoons butter in a nonstick pan over medium-high heat, making sure it does not smoke. Brush scallops with garlic mixture and add to the pan. Remove scallops from the heat and let them continue to cook while they rest, off the heat, for 5 more minutes. Plate and serve.

Tips:

  • Choose high-quality scallops: Look for scallops that are plump, opaque, and have a slightly briny smell. Avoid scallops that are slimy or have a strong fishy odor.
  • Pat the scallops dry before searing: This will help them brown evenly and prevent them from steaming.
  • Use a well-seasoned cast iron skillet: A cast iron skillet will help the scallops sear evenly and develop a nice crust.
  • Sear the scallops over high heat: This will help them caramelize and develop a delicious flavor.
  • Do not overcrowd the skillet: If you overcrowd the skillet, the scallops will not sear properly and will steam instead.
  • Cook the scallops for 2-3 minutes per side, or until they are golden brown and opaque throughout: Do not overcook the scallops, or they will become tough and chewy.
  • Serve the scallops immediately with your favorite dipping sauce: Garlic lemon butter sauce is a classic choice, but you can also try a variety of other sauces, such as tartar sauce, cocktail sauce, or a simple vinaigrette.

Conclusion:

Garlic lemon butter seared scallops are a delicious and easy-to-make seafood dish. By following the tips above, you can ensure that your scallops are cooked perfectly and have a delicious flavor. Serve them with your favorite dipping sauce and enjoy!
