5 slices bacon
1 clove garlic, minced
1 pound ground pork
Kosher salt and freshly ground pepper
1/4 teaspoon dried rubbed sage
Freshly ground pepper
4 potato buns, split
Unsalted butter, softened, for spreading
Coleslaw, for topping

Steps:

  • Pulse the bacon and garlic in a food processor until coarsely ground.
  • Combine the ground pork, 1 teaspoon salt, 1/4 teaspoon pepper and the sage in a large bowl. Add the bacon mixture and gently mix with your hands. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
  • Preheat a grill to medium high. Season the patties with pepper. Grill, undisturbed, until marked on the bottom, 5 to 6 minutes. Turn and grill until the other side is marked and the patties feel firm, 4 to 6 more minutes. Meanwhile, spread the cut sides of the buns with butter and toast on the grill.
  • Serve the patties on the buns; top with coleslaw.

2 pounds boneless pork chops
½ teaspoon paprika
1 pinch kosher salt and ground black pepper to taste
¼ cup butter, divided
1 (8 ounce) package sliced fresh mushrooms
4 cloves garlic, minced
1 teaspoon Dijon mustard
2 tablespoons all-purpose flour
2 cups beef broth

Steps:

  • Season both sides of pork chops with paprika, salt, and pepper.
  • Heat a large skillet over medium-high heat; add 2 tablespoons butter. Sear pork chops until golden brown and no longer pink in the center, 2 to 4 minutes per side. Remove pork chops from the skillet and set aside.
  • Melt remaining butter in the same skillet over medium-high heat. Add mushrooms and cook until golden and excess moisture evaporates, about 5 minutes. Add garlic and mustard; cook until garlic is fragrant, about 1 minute.
  • Add flour to the skillet, stirring to remove any lumps. Slowly add beef broth, whisking until incorporated. Season with salt and pepper. Reduce heat to medium and simmer, stirring often, until sauce thickens, about 5 minutes. Check for seasoning again.
  • Return pork chops to the skillet and cook until heated through, about 1 minute. Serve hot.

1 lb ground pork
5 mushrooms, sliced and sauteed
4 garlic cloves, pressed and sauteed
3 dashes Worcestershire sauce

Steps:

  • Sauté mushrooms and garlic.
  • Mix with ground pork.
  • Add 3 splashes of Worcestershire sauce.
  • Mix thoroughly.
  • Broil in oven 10 minutes (depending on oven), flipping once.
  • *I would also probably add some chopped onion to the sauté, but DH can't have those, so I haven't tried it.

2 pounds ground chuck
Salt and freshly ground black pepper
1/2 cup Roasted Garlic Paste, recipe follows
4 small loaves levain bread
Sliced tomatoes, for serving
Sliced dill pickles, for serving
Blue cheese, for serving
Dijon Garlic Sauce, recipe follows
Sauteed Portobello Mushroom Caps, recipe follows
1/2 cup peeled garlic cloves
1 cup extra-virgin olive oil
1/2 cup Dijon mustard
1/2 cup Roasted Garlic Paste
1/2 teaspoon freshly ground pepper
1 teaspoon salt
6 dill pickles, diced small
2 tablespoons dill pickle juice, from the jar
6 tablespoons extra-virgin olive oil
1 1/2 pounds whole portobello mushroom caps, cut into 1/2-inch dice
2 tablespoons unsalted butter
Sea salt, preferably gray salt
Freshly ground black pepper
1/4 cup sliced shallots or red onion
2 tablespoons sliced garlic
1 1/2 teaspoons minced fresh thyme leaves
1 cup dry red wine
1/2 cups flat-leaf parsley, chopped

Steps:

  • Preheat a grill, or preheat the oven to 400 degrees F.
  • In a bowl, mix together the meat, salt and pepper, and Roasted Garlic Paste.
  • Using your hands, form 4 individual burgers. Wrap in plastic wrap and refrigerate until ready to grill.
  • Cook the burgers over a hot fire or roast in the oven until desired internal temperature is reached, about 160 degrees for medium.
  • Split each loaf of levain bread and pull out some of the soft center to make a hole for the burger. Place the bread face down on the grill to toast.
  • Place the burger in the bread and serve with garnishes.
  • Combine the garlic and oil. Bring to a boil and then reduce heat to medium. Simmer until garlic is brown and soft. Smash garlic with the back of a spoon; keep some chunks.
  • Mix all ingredients together. Cover and refrigerate.
  • Heat a large skillet over high heat. Add the olive oil. When the oil is hot, arrange the mushrooms in a single layer. Don't stir! Let them sizzle until they have caramelized on the bottom, about 2 minutes. If you toss them too soon, they will release their liquid and begin to steam. When the bottoms are caramelized, toss the mushrooms and continue to cook over high heat for about 5 minutes.
  • Add the butter. Continue to cook, stirring occasionally, until the mushrooms are beautifully browned, about 2 to 3 minutes. Season with salt and pepper and add the shallots and garlic. Saute until the garlic is lightly browned, about 2 minutes. Add the thyme. Add the wine, reduce the heat slightly, and simmer until the mushrooms are glazed with the sauce. Add the parsley, transfer to a warmed bowl, and serve immediately.

Though there are virtually no reported cases of trichinosis from commercial pork in the United States, few people will sample raw pork - or lamb, with which the danger is even less. So the thing to do is season the meat, then cook up a spoonful in a skillet, taste and season as necessary. Remember that the burger is the cousin not only of the steak - which often takes no seasoning beyond salt and pepper - but also of the meatloaf and the meatball, both of which are highly seasoned. Think about adding minced garlic in small quantities, chopped onion, herbs (especially parsley), grated Parmesan, minced ginger, the old reliable Worcestershire, hot sauce, good chili powder and so on. It's hard to go wrong here.

1 teaspoon salt, more to taste

  • Serve on buns, toast or hard rolls, garnished as you like.

50g vegetarian gruyère , grated
1 garlic clove , crushed

These are wonderful grilled, of course you may season the ground pork to suit your taste, but I find if you are grilling the pork burgers, that they are better mixed with just the bare basics such as salt and pepper, Worcestershire sauce and mustard (if using) as the middle filling has a lot of flavor. I just stated the basics LOL! The filling alone, can be prepared up to a day ahead, also the pork burgers can be stuffed a day ahead, covered an refrigerated until ready to grill. This recipe produces a lot of pork patties (around 12-14) I most always prepare/stuff the patties and freeze half for next time, unless that is, you are feeding a gang of hungry people! I have used half ground pork and half ground beef for this also.

1/2 cup thinly sliced green onion
2 -3 minced fresh garlic cloves
