1 large head cauliflower (about 2-1/2 pounds), broken into florets
1 cup shredded Parmesan cheese, divided
1/3 cup heavy whipping cream or half-and-half cream
1 tablespoon butter
1/2 teaspoon pepper
Minced fresh parsley, optional

  • Place 1 in. of water and cauliflower in a large saucepan; bring to a boil over high heat. Cook, covered, until cauliflower is soft, 10-12 minutes. Drain., Mash cauliflower to desired consistency. 1 head cauliflower, cut into florets
1 tablespoon olive oil
1 clove garlic, smashed
¼ cup grated Parmesan cheese
1 tablespoon reduced-fat cream cheese
½ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.

3 tablespoons light butter

2 T. vegan butter
