Tips:
- Use fresh herbs for the best flavor. Dried herbs can be used in a pinch, but fresh herbs will give your sauce a more vibrant flavor.
- Don't be afraid to experiment with different herbs. The recipe calls for parsley, thyme, and rosemary, but you can use any herbs that you like. Some other good options include basil, oregano, marjoram, and sage.
- Use a good quality olive oil. The olive oil will help to bring out the flavor of the herbs and garlic.
- Don't overcrowd the pan when roasting the chicken. If the chicken is too crowded, it will not cook evenly.
- Roast the chicken until it is golden brown and cooked through. The internal temperature of the chicken should be 165 degrees Fahrenheit.
- Let the chicken rest before carving. This will help the juices to redistribute throughout the chicken, making it more tender and flavorful.
