CHEF JOHN'S SHRIMP FRA DIAVOLO

Chef John's Shrimp Fra Diavolo image

This recipe features the devilishly delicious shrimp fra diavolo, or 'shrimp brother devil' if we are being literal for comic effect. It's really good and turns any pile of pasta or rice into a memorable meal. Some people like to add a little lemon, but I don't think it needs it unless your wine is too sweet.

Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your shrimp fra diavolo.
  • Don't overcrowd the pan. If you add too much shrimp to the pan, it will not cook evenly and will end up rubbery.
  • Cook the shrimp until it is just cooked through. Overcooked shrimp will be tough and chewy.
  • Add the sauce to the shrimp at the end of cooking. This will help to prevent the shrimp from overcooking.
  • Serve the shrimp fra diavolo over pasta, rice, or polenta. This will help to soak up the delicious sauce.
