Categories     Bon Appétit     Dinner     Stir-Fry     Steak     Beef     Rice     Soy Sauce     Ginger     Onion     Wheat/Gluten-Free     Tree Nut Free     Peanut Free

Yield 4 servings

Number Of Ingredients 12

1 lb. skirt steak, trimmed, sliced against the grain into 1/4"-thick strips, patted dry
1 tsp. sugar
1 tsp. toasted sesame oil
1 tsp. plus 1 Tbsp. soy sauce
1 tsp. kosher salt, plus more
1 Tbsp. vegetable oil
1 medium sweet onion, sliced into 1/2"-thick rounds
1 (3") piece ginger, peeled, very thinly sliced
Freshly ground black pepper
3 Tbsp. unsalted butter, cut into pieces
1 Tbsp. fresh lemon juice
Cooked rice (for serving)

Steps:

  • Toss steak in a medium bowl with sugar, sesame oil, 1 tsp. soy sauce, and 1 tsp. salt to coat and let sit 20 minutes.
  • Place a large skillet over high heat. Pour in vegetable oil and swirl to coat bottom of pan. The oil should be shimmering and you should see some wisps of smoke-if it's not hot enough, the meat will steam instead of getting deeply browned.
  • Add steak to skillet in an even layer (it's okay to crowd it a bit) and cook, undisturbed, until brown around the edges, about 2 minutes. Turn steak over and add onion, ginger, lots of pepper, and 1/3 cup water. Cook, tossing often, until onion is just tender and ginger is softened, about 2 minutes.
  • Remove skillet from heat and add butter, lemon juice, and remaining 1 Tbsp. soy sauce. Toss until butter is melted and coats steak. Taste and season with more salt if needed.
  • Divide rice among bowls and top with beef stir-fry.

GINGER BEEF STIR-FRY

Ginger Beef Stir-Fry image

Based on Miraklegirl's "Crispy Ginger Beef" (recipe #107072). I modified her recipe based on the ingredients I had on hand. The sauce turned out really yummy, so I'm posting my version here for safe-keeping. (My husband and I aren't huge stir-fry fans, so now that I've found a recipe we both enjoy I'd better not lose it...) Of course, the meat and veggies can be substituted for whatever you have handy (or make it meatless if you want).

Time 30m

Yield 2-4 serving(s)

Number Of Ingredients 15

250 g stir-fry beef
1/2 cup cornstarch
1/2 cup water
3 large mushrooms, sliced
1 red pepper, sliced
3 stalks celery, sliced
1 cup baby carrots, cut into matchstick pieces
1/4 cup fresh ginger, minced
2 teaspoons garlic, minced
1 tablespoon canola oil
2 1/2 tablespoons soy sauce
4 tablespoons red wine vinegar
1/2 cup brown sugar
1 dash cayenne pepper
1 tablespoon toasted sesame seeds

Steps:

  • Note, because this cooks pretty fast, have all your measuring, chopping, etc done beforehand. Also, if you are planning on serving it on rice or noodles, they should be ready or almost-ready when you begin stir-frying.
  • Combine cornstarch and water in a medium bowl. Add beef strips & toss to coat.
  • Heat oil in wok or large skillet (on high heat). Toss in beef and stir-fry until cooked (3-5 minutes or so). Remove and set aside.
  • Put veggies, garlic & ginger in the pan & stir-fry for about 5 minutes or so.
  • Combine soy sauce, vinegar, brown sugar & cayenne pepper; add to pan.
  • Bring to a boil, then add the cooked beef.
  • Continue to stir-fry until heated through. Top with sesame seeds.

Tips:

  • Prep ahead: Slice the beef and vegetables, and marinate the beef, ahead of time to save time when cooking.
  • Use a hot pan: Make sure your pan or wok is nice and hot before adding the beef. This will help to sear the beef and prevent it from sticking.
  • Don't overcrowd the pan: Cook the beef in batches, if necessary, to avoid overcrowding the pan. Overcrowding will make the beef steam instead of sear.
  • Stir-fry quickly: Stir-fry the beef and vegetables quickly over high heat. This will help to keep the vegetables crisp and the beef tender.
  • Add sauce at the end: Add the sauce towards the end of cooking, so that it doesn't overcook and burn.
  • Serve immediately: Ginger beef stir-fry is best served immediately, with rice, noodles, or your favorite side dish.

Conclusion:

Ginger beef stir-fry is a delicious and easy-to-make dish that is perfect for a weeknight meal. With a few simple tips, you can make a restaurant-quality ginger beef stir-fry at home. So, next time you're looking for a quick and flavorful meal, give ginger beef stir-fry a try!
