Yield Makes 1 1/4 cups

Steps:
- In a small pot, bring 7 ounces water, sugar, and ginger to a boil. Stir to dissolve sugar. Remove from heat, add zest, and steep for 30 minutes. Strain, add lime juice, and let cool.
Tips:
- Use fresh ginger for the best flavor. Ginger that is older or has been stored improperly may have lost some of its potency.
- Peel the ginger before using it. The peel can be tough and bitter.
- Grate or mince the ginger finely. This will help it dissolve more easily into the cordial.
- Use a high-quality honey. The honey will add sweetness and flavor to the cordial.
- Sterilize the jars and lids before using them. This will help to prevent the cordial from spoiling.
- Store the cordial in a cool, dark place. The cordial will keep for up to 6 months.
Conclusion:
Ginger cordial is a delicious and versatile drink that can be enjoyed on its own or used in cocktails, mocktails, and other beverages. It is a great way to use up extra ginger and it is also a healthy and natural way to boost your immune system. With its many benefits, ginger cordial is a great addition to any home bar or pantry.
