Time 1h15m

Yield 1 1/2 cups

Number Of Ingredients 4

8 ounces spring ginger, peeled and sliced into thin disks
1 1/2 cups sugar
2 or 3 2-inch-long strips lemon zest (optional)
1 small dried hot pepper (optional)

  • Reduce heat to low and simmer 30 minutes. Remove pepper, if using, and continue simmering until syrup is reduced by half, about 30 minutes. Do not reduce too much or syrup will crystallize when cool.
  • Remove syrup from heat and allow to cool. Strain it, reserving the ginger for another use (like candied ginger) if desired. Pour syrup into a jar or bottle, and refrigerate for up to a week; flavor will fade after that. (To make a quick ginger ale, put 2 teaspoons in 1/2 cup soda water and stir.)

GINGER SYRUP

Ginger Syrup image

Consider making extra of this spicy syrup-it's delicious stirred into tea, added to smoothies, or drizzled over ice cream.

Provided by Susan Feniger

Categories     Ginger     Quick & Easy     Simmer     Gourmet

Yield Makes about 1 cup

Number Of Ingredients 3

1/4 pound ginger, peeled and thinly sliced (about 3/4 cup)
1 cup sugar
1 cup water

Steps:

  • Bring ginger, sugar, and water to a simmer in a small heavy saucepan over medium-low heat, stirring until sugar has dissolved, then gently simmer, uncovered, 30 minutes. Strain through a sieve and reserve ginger for another use (see cooks' note, below), then cool to room temperature.

Tips:

  • Choose the right ginger: Use fresh, young ginger for the best flavor. Avoid using old or woody ginger, as it can be bitter.
  • Peel the ginger properly: Use a spoon to scrape the skin off the ginger. This will help to preserve the flavor and aroma of the ginger.
  • Use a variety of spices: Don't be afraid to experiment with different spices to create your own unique syrup. Some good options include cinnamon, cloves, nutmeg, and cardamom.
  • Simmer the syrup gently: Don't boil the syrup, as this can cause the flavors to become harsh. Instead, simmer it gently over low heat until it has thickened.
  • Strain the syrup: Once the syrup has cooled slightly, strain it through a fine-mesh sieve to remove any solids.
  • Store the syrup properly: Store the syrup in a clean glass jar or bottle in the refrigerator for up to 2 weeks.

Conclusion:

Ginger spice syrup is a versatile ingredient that can be used in a variety of drinks and desserts. It's perfect for adding a warm, spicy flavor to your favorite cocktails, mocktails, teas, and sodas. You can also use it to drizzle over pancakes, waffles, or ice cream. With its many uses and delicious flavor, ginger spice syrup is a great addition to any home kitchen.
