Time 20m

Yield 2 serving(s)

Number Of Ingredients 8

6 cups cabbage, chopped
2 eggs, beaten
4 garlic cloves, chopped
1/2 cup onion, chopped
1/2 cup tomatoes, chopped
2 tablespoons fish sauce
salt, to taste
cooking oil

Steps:

  • In a large, deep frying pan or wok, saute garlic and onion over medium-high heat until fragrant - about 2 minutes. Add fish sauce and cabbage and cook until crisp-tender, about another 3 or 4 minutes.
  • Add tomatoes and cook another two minutes, or until heated through.
  • Add beaten eggs to pan, stirring as you add them to the pan. Cook just until eggs are done and serve hot.

Tips:

  • Choose the right cabbage: Use a firm, fresh cabbage with tightly packed leaves. Avoid wilted or bruised cabbage.
  • Cut the cabbage properly: Shred the cabbage thinly so that it cooks evenly. You can use a sharp knife or a mandoline to shred the cabbage.
  • Use a large skillet: A large skillet will help to prevent the cabbage from overcrowding and steaming instead of frying.
  • Cook the cabbage over medium heat: Medium heat will help to prevent the cabbage from burning and will allow it to cook evenly.
  • Stir the cabbage frequently: Stirring the cabbage frequently will help to prevent it from sticking to the pan and will help it to cook evenly.
  • Add the tomatoes and onion towards the end of cooking: Adding the tomatoes and onion towards the end of cooking will help to prevent them from becoming overcooked and mushy.
  • Season the cabbage to taste: Season the cabbage with salt, pepper, and other spices to taste. You can also add a splash of vinegar or lemon juice for a bit of brightness.

Conclusion:

Ginisang repolyo is a simple but delicious Filipino dish that is perfect for a quick and easy weeknight meal. It is also a great way to use up leftover cabbage. The cabbage is stir-fried with garlic, onion, tomatoes, and other spices until it is tender and flavorful. Ginisang repolyo can be served on its own or with rice. It is also a popular ingredient in other Filipino dishes, such as sinigang and kare-kare.
