Time 30m

Yield 8

Number Of Ingredients 4

1 ½ pounds baby carrots
¼ cup butter
⅓ cup maple syrup
salt and ground black pepper to taste

Steps:

  • Place carrots into a pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer carrots to a serving bowl.
  • Melt butter in a saucepan over medium-low heat. Stir maple syrup into melted butter and cook until warmed, 1 to 2 more minutes. Pour butter-maple syrup over carrots and toss to coat; season with salt and pepper.

Tips:

  • Choose the right carrots: Look for carrots that are fresh, firm, and smooth. Avoid carrots that are limp or have blemishes.
  • Peel the carrots thinly: This will help the glaze to adhere to the carrots and prevent them from becoming tough.
  • Use fresh rosemary: Fresh rosemary has a more intense flavor than dried rosemary. If you don't have fresh rosemary, you can use 1 teaspoon of dried rosemary instead.
  • Don't overcrowd the pan: If you overcrowd the pan, the carrots will not cook evenly. Cook the carrots in batches if necessary.
  • Cook the carrots until they are tender: The carrots should be tender but still have a slight bite to them. Overcooked carrots will be mushy.
  • Make the glaze ahead of time: The glaze can be made up to 3 days ahead of time. Just store it in a covered container in the refrigerator.

Conclusion:

Glazed carrots with rosemary are a delicious and easy-to-make side dish. They are perfect for any occasion, from a weeknight dinner to a holiday feast. With just a few simple ingredients, you can create a dish that is both flavorful and visually appealing. So next time you're looking for a side dish that will impress your guests, give these glazed carrots a try.
