This simple, 1-hour roast is our favorite Christmas dish and voted most likely to be served if the President were to drop in for dinner- LOL! I love serving this entree because it causes me NO stress and everyone raves over it. While the pork is roasting, make another batch of the cranberry glaze to serve in a gravy boat alongside the sliced pork roast. For food safety, the new batch should not be prepared in same pan as the first if you have been basting directly out of the saucepan. If you basted out of another dish, you can use the same pan.

1 (14.5 ounce) can whole berry cranberry sauce
1 cup apple jelly
1 tablespoon Dijon mustard
4 cubes chicken bouillon, crushed
1 teaspoon prepared horseradish
2 teaspoons garlic powder
2 tablespoons chopped fresh thyme
1 (4 pound) boneless pork loin roast
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Combine the cranberry sauce, apple jelly, mustard, crushed bouillon, horseradish, garlic powder, and thyme in a saucepan; bring to a boil.
  • Line a large baking pan with foil. Place pork loin in pan, fat side up. Sprinkle evenly with salt and pepper. Use a pastry brush and a small spoon to completely coat the pork with sauce.

1 bone-in pork loin roast (4 to 5 pounds)
1/2 teaspoon salt
1/2 teaspoon pepper
2/3 cup packed brown sugar
2 tablespoons cornstarch
1-1/4 teaspoons ground mustard
2 cups apricot nectar
4 teaspoons cider vinegar

Steps:

  • Sprinkle roast with salt and pepper. Place on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 1 hour. , In a large saucepan, combine the brown sugar, cornstarch and mustard. Stir in apricot nectar and vinegar until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. , Spoon 1/2 cup glaze over roast. Bake 20 minutes longer or until a thermometer reads 145°. Let stand for 10 minutes before slicing. Serve with remaining glaze.

This is a recipe that I adopted. I have used this glaze for pork loin in the past and it's wonderful. The original recipe calls for the roast to be cooked in the microwave, but I always bake mine in the oven so I have added oven instructions to the recipe.

2 1/2 lbs fresh pork loin roast
1 clove garlic, cut into 1/4's
1 teaspoon salt
1 tablespoon orange marmalade
1 teaspoon prepared mustard
1/2 teaspoon dried thyme leaves

Steps:

  • Make 4 slits in fat on pork roast with tip of sharp knife, insert a piece garlic in each slit.
  • Sprinkle roast with salt.
  • Mix marmalade, mustard and thyme, spread on roast.
  • MICROWAVE INSTRUCTIONS Place roast in 16 x 10-inch cooking bag.
  • Close bag loosely with string (leave hole the size of finger in closure).
  • Place roast on microwve roast- ing rack in oblong baking dish 12 x 7 12 x 2-inches.
  • Microwave on medium-low (30%) 30 minutes; turn roast over and turn dish one-half turn.
  • Microwave until roast is done (170 degrees F on meat thermometer inserted in several different places in roast), 20 to 25 minutes.
  • Let stand 10 minutes in bag in microwave.
  • Serve with Meat Juices.
  • OVEN INSTRUCTIONS Preheat oven to 350 degrees.
  • Put the pork loin which has been prepared with garlic and salt in a roasting pan.
  • Bake at 20 minutes per pound or until a meat thermometer registers 160 degrees.
  • Spread marmalade mixture on roast during last 15 minutes of cook time.
  • Remove from oven and allow to rest for 10 minutes prior to slicing.

3 lbs boneless center cut pork loin roast, tied
salt and pepper
2 tablespoons vegetable oil
6 small shallots, peeled (and halved if large)
2 cups apple cider
1/2 cup apple butter
1 bay leaf
1 sprig fresh thyme
1 teaspoon cider vinegar

Steps:

  • Adjust oven rack to middle position and heat oven to 375°F Pat pork loin dry with paper towels and season with salt and pepper.
  • Heat 1 tablespoon oil in large skillet over medium high heat until just smoking. Place pork loin, fat side down, in skillet and cook, turning it several times until browned on all sides. 8 to 10 minutes. Transfer pork, fat side down to 13 x 9-inch baking dish and roast until thermometer inserted registers 85 degrees. About 25 minutes.
  • While pork roasts, cook remaining tablespoon oil and shallots in empty skillet over medium heat until golden brown, 3 to 5 minutes. Increase heat to high, add cider, apple butter, bay leaf and thyme and bring to boil. Cook until thickened, about 8 minutes.
  • After pork has roasted for 25 minutes, pour glaze over pork and roll pork to coat with glaze. Cook until internal temperature registers 145 degrees. 20 to 30 minutes more, turning over halfway through to recoat with glaze. Transfer pork to cutting board, tent with foil and let rest 20 minutes. Transfer glaze to small saucepan and whisk in vinegar.
  • Before slicing pork, pour accumulated juices from roast into glaze and warm glaze over low heat. Cut roast into 1/4-inch slices, transfer to platter and spoon 1/2 cup glaze over top.

3-4 lb. boneless pork single loin roast
½ tsp. salt
¼ tsp. freshly ground pepper
1 T cornstarch
1/3 cup water
1 T olive oil
1 small sweet red pepper, seeded and minced
1 jalapeno pepper, seeded and minced
1/3 cup cider vinegar
2 T sugar
(In a pinch, melt a jar of hot pepper jelly instead of making the glaze.)

Steps:

  • Preheat oven to 325. Sprinkle roast with salt and pepper. Place in roasting pan, fat side up. Roast uncovered for 30 minutes. Meanwhile, whisk cornstarch with 1 T water. Set aside. Heat oil in a small saucepan over medium heat. Add sweet pepper and jalapeno pepper. Sauté 3 minutes or until soft. Add vinegar, sugar and remaining water. Bring to a boil, stirring until sugar is dissolved. Reduce heat and boil gently until liquid is reduced by a third. Whisk cornstarch mixture again and whisk into pan. Boil, stirring for 2 minutes or until thickened and glossy. Let cool slightly. Brush glaze liberally over meat and roast for about 45 minutes longer or until done. Place on cutting board and tent with foil. Let stand for 10 minutes before slicing.
