SALTY-SWEET BARBECUE SALMON AND BROCCOLI

Salty-Sweet Barbecue Salmon and Broccoli image

This salmon and broccoli sheet-pan dinner gets a boost from bottled oyster sauce, which is made from caramelized oyster juices, salt and sugar, and tastes like a sweet yet briny soy sauce. It makes the perfect base for a rich barbecue sauce that comes together in just 10 minutes. Caramelized sugar, tomato paste and soy sauce quickly create depth, while vinegar balances the sweetness. The salty-sweet sauce complements the buttery salmon and does double duty as a glaze and finishing sauce. It also serves as a terrific marinade for chicken and steak, so you may want to make a double batch of it.

Time 30m

Yield 4 servings

Number Of Ingredients 14

1 pound broccoli florets, cut into 1-inch pieces (about 8 cups)
12 scallions, trimmed and halved crosswise
1 (1-inch) piece fresh ginger, peeled and julienned (about 1 1/2 tablespoons)
1/4 cup safflower or canola oil
Kosher salt and black pepper
2 tablespoons finely chopped yellow onion
1 tablespoon minced garlic
1 teaspoon tomato paste
3 tablespoons turbinado sugar (or 2 tablespoons light brown sugar)
6 tablespoons oyster sauce
2 tablespoons unseasoned rice vinegar
1 tablespoon low-sodium soy sauce
4 (6-ounce) skin-on salmon fillets
Steamed rice, for serving

Steps:

  • Heat oven to 450 degrees. On a rimmed baking sheet, combine broccoli, scallions, ginger and 2 tablespoons oil. Season with salt and pepper, and toss to coat. Spread in an even layer and roast until softened, about 15 minutes.
  • While the broccoli mixture roasts, prepare the oyster barbecue sauce: In a small saucepan, heat the remaining 2 tablespoons oil over low. Add onion and garlic, and cook until softened, about 2 minutes. Add tomato paste and cook, stirring frequently, for 1 minute. Add sugar and cook, stirring, until sugar dissolves and the mixture darkens slightly, about 3 minutes. Stir in 1/2 cup water (be careful, as the mixture may splatter a little), then the oyster sauce, vinegar and soy sauce. Bring to a simmer. (The sugar may seize, but keep stirring; it will dissolve.) Cook, stirring, until sauce is thickened, about 5 minutes. Season generously with pepper. Remove 1/2 cup and set aside for passing at the table.
  • Stir the roasted broccoli. Season salmon with salt and arrange on top of the broccoli. Liberally brush salmon all over with half of the remaining oyster barbecue sauce in the saucepan. Roast until the vegetables are caramelized and the salmon is cooked through, 8 to 10 minutes, basting salmon after 5 minutes with the barbecue sauce.
  • Divide salmon and vegetables among plates. Serve with steamed rice and the reserved barbecue sauce.

SPICY-SWEET GLAZED SALMON

Spicy-Sweet Glazed Salmon image

I looked for a recipe for glazed salmon and didn't find one that used the ingredients I had on hand. So I threw together what I had and came up with this tangy, spicy sweet marinade that adds flavor, but doesn't mask the flavor of the salmon. My kids and sister loved it. They said it was better than 'restaurant salmon' It's great served with wild rice and stir fried veggies.

Time 2h20m

Yield 6

Number Of Ingredients 12

1 ½ pounds fresh salmon fillet with skin removed
¼ cup red wine vinegar
¼ cup olive oil
¼ cup soy sauce
¼ cup water
1 tablespoon lemon juice
½ teaspoon red pepper flakes, or to taste
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons chopped fresh cilantro
⅓ cup brown sugar, packed
salt and ground black pepper to taste

Steps:

  • Place salmon in a shallow, flat dish, and set aside. Combine the vinegar, olive oil, soy sauce, water, lemon juice, red pepper flakes, onion powder, garlic powder, cilantro, and brown sugar in a blender. Blend until brown sugar dissolves. Pour the marinade over the salmon to cover evenly. Cover the dish, and refrigerate at least 2 hours.
  • Line a broiling pan with foil. Remove salmon from marinade, and place on prepared broiling pan; season to taste with salt and pepper. Transfer remaining marinade to a saucepan.
  • Turn on broiler to low.
  • Broil salmon about 6 inches from the heat for 5 minutes; brush with remaining marinade. Broil an additional 5 to 10 minutes, brushing 2 or 3 more times with additional marinade. Salmon is done when fish is no longer bright red and can be flaked with a fork.
  • Meanwhile, cook the remaining marinade over low heat until it thickens and reduces by one-third, 5 to 10 minutes. Use cooked marinade as a dipping sauce or drizzle over salmon just before serving.

Tips:

  • To ensure even cooking, choose salmon fillets of similar thickness. If your fillets vary in size, adjust the cooking time accordingly.
  • Pat the salmon fillets dry with paper towels before cooking. This will help the glaze adhere better and prevent the fish from steaming.
  • Use a non-stick skillet or baking sheet to prevent the salmon from sticking. If you are using a baking sheet, line it with parchment paper for easy cleanup.
  • Cook the salmon until it is just cooked through. Overcooked salmon will be dry and flaky. The best way to check for doneness is to insert a fork into the thickest part of the fillet. If it flakes easily, it is done.
  • While the salmon is cooking, prepare the spicy broccoli. This can be done ahead of time and reheated just before serving.
  • Serve the glazed salmon with the spicy broccoli and your favorite sides. Roasted potatoes, steamed vegetables, or a salad are all great options.

Conclusion:

This glazed salmon with spicy broccoli is a flavorful and easy-to-make dish that is perfect for a weeknight meal. The salmon is cooked to perfection and the spicy broccoli adds a nice kick of heat. This dish is sure to please everyone at your table.
