1 cup uncooked white rice
ΒΌ cup white sugar
2 (15 ounce) cans crushed pineapple
1 cup miniature marshmallows
1 cup heavy cream, whipped
6 maraschino cherries

Steps:

  • In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • In a large bowl combine the cooked, cooled rice, sugar, pineapple and marshmallows. Fold in the whipped cream. Chill for 4 hours.
  • Spoon the rice mixture into 6 dessert dishes and place a cherry on top of each.

1/3 cup sugar
20 ounces crushed pineapple, drained
1/2 teaspoon vanilla extract
1/3 cup mini marshmallows
2 Tablespoons maraschino cherries, drained and chopped
1 cup Cool Whip or Whipped Heavy Whipping Cream

Steps:

  • Mix together rice, sugar, pineapple, and vanilla.
  • Stir in marshmallows and chopped cherries.
  • Fold in Cool Whip.

This is a recipe I've gotten from my mom, who got it from my grandma. They would make this usually for holiday meals while I was growing up. It's been my favorite since I can remember. I started making this dish when MY daughter was born, and it quickly became one of her favorites too. Now I make it anytime, not just for holidays. :)

2 package(s) lemon jello
1 can(s) crushed pineapple (20 oz)
4 cup(s) cooked rice, not minute rice
1 pint(s) whipping cream
8 tablespoon(s) sugar (for the whipping cream)

Steps:

  • Dissolve jello in 2 c Hot water. Drain the pineapple, add the juice to enough water to make 1 1/2 c. Add this to the jello/hot water. Let thicken, then add the cooled rice and pineapple. Let this set up. Whip the cream with the sugar, and fold into the rice/pineapple mixture.
