2 1/2 pounds of potatoes
4 tablespoons butter (or more if you like)
salt and pepper to taste

Steps:

  • Peel and cube the potatoes.
  • Place potatoes into a large cooking pot and cover with water. Bring to a boil and then boil until fork tender, about 15 minutes.
  • Drain the potatoes and return to the pan. Add in the butter, salt, and pepper.
  • Mash with a potato masher until no lumps remain.
  • Serve warm.

4 to 5 pounds Yukon potatoes, washed, peeled and cut
1 to 1½ cups whole milk
½ stick butter plus more for serving
kosher salt
fresh parsley, chopped

Steps:

  • In a big pot, place potatoes and add enough water. Sprinkle some salt and boil until tender about 15 minutes. Drain and return to pot. Use a potato masher then add butter and milk. Season with salt. Top with parsley and more butter.

1 ½ pounds lean ground beef
1 ½ cups crispy rice cereal squares (such as Rice Chex®), finely crushed
1 (12 ounce) can tomato sauce, divided
1 cup finely shredded carrots
¼ cup chopped fresh parsley
2 large eggs
1 clove garlic, minced
¾ teaspoon salt
¾ teaspoon ground white pepper
3 cups prepared mashed potatoes
1 cup shredded Italian cheese blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 2 1/2-quart baking dish (either a 9-inch square or a 7x11-inch) with cooking spray.
  • Mix together ground beef, crushed cereal, 2/3 of the tomato sauce, carrots, parsley, eggs, garlic, salt, and pepper until well combined.
  • Press 1/2 of the beef mixture into the prepared pan. Spread mashed potatoes on top, then spread remaining beef mixture on top of that. Cover with foil.
  • Bake in the preheated oven for 45 minutes. Remove foil and top with remaining tomato sauce. Sprinkle Italian cheese blend over top.
  • Return to the oven and bake until cheese is completely melted or begins to gently brown, 10 to 15 more minutes.
  • Cool for 15 minutes before serving.
