GLUTEN FREE TROPICAL BANANA BREAD
A moist and delicious banana bread for those unable to eat wheat gluten. It's a variation on GinnyP's recipe #57225, which was pretty good, but lacked any type of flour. The coconut flour I've added in this version adds a little more depth to the flavor, as well as consistency in the batter. As with all gluten free breads, it's best when fresh, but by tightly wrapping the bread as soon as it cools, it stayed moist for several days.

Tips:
- To ensure the desired texture, use ripe bananas. Overripe bananas will result in a denser loaf, while slightly unripe bananas will yield a cake-like consistency.
- For optimal flavor and texture, use a combination of different flours. Gluten-free oat flour, almond flour, and tapioca flour work well together.
- To achieve a moist and rich loaf, use coconut oil or unsalted butter instead of refined vegetable oil.
- For a subtle tropical flavor, add freshly grated coconut or flaked coconut during the mixing process.
- Enhance the overall taste by incorporating chopped walnuts, pecans, or macadamia nuts into the batter.
- To create a delectable glaze, combine powdered sugar, coconut milk, and vanilla extract, then drizzle it over the cooled loaf before serving.
