4 tilapia fillets (4 ounces each)
4 teaspoons butter
1 large egg
3/4 cup crumbled tomato and basil feta cheese
1/4 cup fat-free milk
1/4 teaspoon cayenne pepper
1 large tomato, seeded and chopped
1/4 cup chopped ripe olives
1/4 cup pine nuts, toasted
1 tablespoon minced fresh parsley
1 tablespoon lemon juice
1/8 teaspoon pepper

Steps:

  • In a large cast-iron or other ovenproof skillet, brown fish in butter., In a small bowl, combine the egg, cheese, milk and cayenne; spoon over fish. Sprinkle with tomato, olives and pine nuts. Bake, uncovered, at 425° until fish just begins to flake easily with a fork, 10-15 minutes., In a small bowl, combine the parsley, lemon juice and pepper; drizzle over fish.

2 tablespoons all-purpose flour
2 teaspoons chopped fresh oregano, plus more for garnish
2 tablespoons chopped fresh parsley
Kosher salt and freshly ground pepper
Four 6-ounce tilapia fillets
4 tablespoons unsalted butter
1/2 pound thin green beans or haricots verts
1 clove garlic, chopped
1 cup grape or cherry tomatoes, halved
Juice of 1 lemon

Steps:

  • Combine the flour, oregano and parsley in a shallow dish. Season with salt and pepper.
  • Place a large skillet over medium-high heat. Dredge the fish in the flour mixture, shaking off the excess. Melt 3 tablespoons butter in the skillet, then add 2 fillets and cook until golden brown on the bottom, about 4 minutes. Flip and cook through, 1 to 2 more minutes. Transfer to a plate and keep warm. Repeat with the remaining 2 fillets.
  • Add the green beans and garlic to the skillet and cook about 2 minutes. Season with salt and pepper, then add the tomatoes and cook until just softened, about 1 more minute. Stir in the lemon juice and 1/4 cup water, then cover and cook until the beans are tender, about 3 more minutes. Remove from the heat and stir in the remaining 1 tablespoon butter until just melted.
  • Divide the fish and vegetables among plates. Garnish with oregano.

1 1/2 lbs tilapia fillets
2 lemons
1/2 tablespoon olive oil
salt and pepper
1 (6 ounce) package fresh Baby Spinach
1 (16 ounce) jar prepared pasta sauce (your favorite marinara sauce)
1 (6 ounce) package crumbled feta cheese

Steps:

  • Preheat the oven to 450 degrees.
  • In a glass baking dish, squeeze the juice of one lemon. Add the olive oil.
  • Put the fillets in the dish and rub the lemon oil mixture on both sides; add salt and pepper to taste.
  • Take large spoonfuls of the spinach, sauce and cheese (in that order) and place in the center of each fillet.
  • Roll up each fillet and secure with a toothpick.

1 medium scallion, chopped
2 small mushrooms, chopped
3 kalamata olives, chopped
2/3 cup canned tomato
1/2 teaspoon dried oregano
1/8 cup feta cheese

Steps:

  • Preheat oven to 425°F
  • In a small baking dish, arrange tilapia fillet and sprinkle with lemon juice, salt and pepper. Scatter green onion, mushroom slices and olives over top. Spoon tomatoes over, adding some of the tomato juices if desired. Sprinkle with oregano. Top with crumbled feta.

2/3 cup Progresso™ plain panko crispy bread crumbs
1 teaspoon grated lemon peel
1/2 teaspoon dried oregano leaves
1/2 teaspoon salt
1/4 teaspoon pepper
1 egg
4 tilapia fillets or other mild-flavored, medium-firm fish fillets (3 oz each)
Cooking spray
4 whole wheat pita breads (6 inch)
4 leaves leaf lettuce, washed and patted dry with paper towels, torn
1/2 cup thinly sliced cucumber
2 plum (Roma) tomatoes, seeded and coarsely chopped

Steps:

  • Heat oven to 425° F. Spray cookie sheet with cooking spray. In small bowl, mix Tzatziki ingredients. Cover and refrigerate until serving time.

  • To serve, place lettuce leaf on half of each pita bread. Top with fish fillet, cucumber and tomato. Drizzle with tzatziki; fold other half of pita breads over fillings.
