Goat Cheese and Chive Biscuits (adapted from Southern Lady magazine, Jan/Feb. 2011)
Makes about 1 dozen
3 cups self-rising flour
1/2 cup unsalted butter, cut into cubes
8 ounces goat cheese, crumbled
1/4 cup finely minced chives
2/3 cup half-and-half
2 Tbsp. butter, melted

Steps:

  • 1.Preheat oven to 425 F. Line a baking sheet with parchment paper or spray the sheet with non-stick cooking spray. 2.Place flour in a medium bowling. Using a pastry blender, cut in butter and goat cheese until mixture is crumbly. (You can also use a food processor - but just be sure to 'pulse' until you achieve the desired consistency.) Add chives; stir well. Add half-and-half, stirring just until dry ingredients are moistened. 3.On a lightly floured surface, roll dough to 1/2″ thickness. Cut scones using a 2 3/4″ inch biscuit cutter and place on prepared pan. Bake for 16 to 18 minutes, or until lightly browned. Brush with melted butter. Serve.

Tips:

  • Use high-quality ingredients, especially butter and cheese. Fresh herbs like chives add a burst of flavor.
  • Chilling the dough before rolling and cutting helps prevent the biscuits from spreading too much in the oven.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk and letting it sit for 5 minutes.
  • To make the biscuits extra cheesy, sprinkle some grated Parmesan or cheddar cheese on top before baking.
  • Feel free to experiment with different herbs and spices. Garlic powder, onion powder, or paprika are all great additions.

Conclusion:

These goat cheese chive biscuits are a delicious and easy-to-make treat that are perfect for any occasion. They're perfect for breakfast, lunch, or dinner. They can also be served as an appetizer or snack. You can also try some interesting variations, such as cheddar and bacon or jalapeño and cheddar. No matter how you choose to make them, these biscuits are sure to be a hit.
