Yield 6 servings

Number Of Ingredients 9

1 quart peanut oil
1 cup stone-ground fine cornmeal
1 cup all purpose flour
1 teaspoon seafood seasoning (recommended: Old Bay)
1/2 teaspoon kosher salt
1/4 teaspoon hot smoked paprika
1/4 teaspoon freshly ground black pepper
6 (7 to 9-ounce) US farm-raised catfish fillets, rinsed and thoroughly patted dry
3/4 cup low-fat buttermilk

Steps:

  • Heat the peanut oil in a 5-quart Dutch oven over high heat until it reaches 350 degrees F on a deep-fry thermometer. Adjust the heat to maintain the temperature.

Season the catfish fillets evenly on both sides with the spice mixture. Pour the buttermilk into another shallow dish. Dip each fillet into the buttermilk, flip once to coat both sides, hold over the pan and allow the excess to drip off. Coat both sides of the fillets in the cornmeal mixture. Tips:

  • Choose the right catfish fillets. Look for fillets that are firm and have a mild, sweet flavor. Avoid fillets that are thin or have a strong, fishy smell.
  • Season the catfish fillets well. Salt, pepper, and garlic powder are all good basic seasonings. You can also add other spices or herbs, such as paprika, cumin, or oregano.
  • Cook the catfish fillets over medium heat. This will help to prevent the fillets from drying out. If you cook the fillets over too high heat, they will be tough and overcooked.
  • Cook the catfish fillets until they are opaque and flake easily with a fork. This usually takes about 10 minutes per side. You can also check the internal temperature of the fillets with a meat thermometer. The fillets are done when they reach an internal temperature of 145 degrees Fahrenheit.
  • Serve the catfish fillets immediately. They can be served with a variety of sides, such as rice, mashed potatoes, or roasted vegetables.

Conclusion:

Golden catfish fillets are a delicious and healthy meal that is easy to make. By following these tips, you can cook catfish fillets that are perfectly cooked and full of flavor. So next time you're looking for a quick and easy weeknight meal, give golden catfish fillets a try!
