½ onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 yellow bell pepper, diced

2 teaspoons salt
1 teaspoon pepper

Tips:

  • Choose the right cauliflower. For the best results, use a head of cauliflower that is fresh, firm, and white. Avoid heads that have any brown or yellow spots.
  • Cut the cauliflower into small florets. This will help the cauliflower rice cook evenly. You can use a knife or a food processor to cut the florets.
  • Pulse the cauliflower florets in a food processor until they resemble rice. You don't want to over-process the cauliflower, or it will become mushy. Just pulse it until the florets are broken down into small pieces.
  • Rinse the cauliflower rice. This will help to remove any excess starch and make the cauliflower rice less sticky.
  • Cook the cauliflower rice. You can cook cauliflower rice in a variety of ways. You can sauté it in a pan, steam it, or microwave it. Just be sure to cook it until it is tender but still has a slight crunch.
  • Add your favorite vegetables. Once the cauliflower rice is cooked, you can add any vegetables you like. Some popular options include broccoli, carrots, peas, and corn.
