Yield 12

Number Of Ingredients 15

1 cup Fiber One™ cereal
2/3 cup fat-free (skim) milk
1 cup Gold Medal™ all-purpose flour
3/4 cup ground flaxseed or flaxseed meal
3/4 cup chopped apple
1/2 cup packed brown sugar
1/2 cup finely shredded carrot
1/4 cup granulated sugar
1/4 cup flaked coconut
1 tablespoon canola or soybean oil

Tips:

  • For a sweeter muffin, add an extra 1/4 cup of sugar to the batter.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
  • To make gluten-free muffins, use a gluten-free flour blend. You may need to add a little extra liquid to the batter, as gluten-free flours tend to be more absorbent.
  • For a vegan version of these muffins, use a plant-based milk and butter substitute. You can also use mashed banana or applesauce in place of the eggs.
  • Be sure to not overmix the batter, as this can make the muffins tough. Mix just until the ingredients are combined.
  • Fill the muffin cups about 2/3 full. If you fill them too full, the muffins will overflow in the oven.
  • Bake the muffins for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

Golden Harvest Muffins are a delicious and easy-to-make breakfast treat. They are perfect for busy mornings or as a snack on the go. With their moist texture and sweet flavor, these muffins are sure to be a hit with everyone who tries them. So next time you're looking for a quick and easy breakfast or snack, give Golden Harvest Muffins a try.
