500 g prawn
10 cloves thai garlic
1 coriander root
1 tbsp black peppercorn
2 tbsp fish sauce
3 tbsp vegetable oil
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp sugar
1 tbsp water
2 tbsp deep fried garlic (ready-made)
3 coriander leaves
1 cucumber (sliced)
4 bowls of steamed white rice

Steps:

  • Blend garlic pepper paste. Using a mortar or a blender, blend garlic, coriander root and black peppercorn until it forms a paste. Set it aside.
  • Add seafood and seasoning. In a mixing bowl, add 1 tbsp fish sauce and prawns and mix well. Heat a non-stick pan with 3 tbsp vegetable oil on medium heat. Next, add garlic pepper paste into the pan and stir for about 15 seconds or until it's fragrant. Next, add the seasoned prawns in. Season with oyster sauce, soy sauce sauce, and 1 tbsp fish sauce and sugar. Stir to combine. Transfer prawns to a serving plate and set it aside.

20 raw king prawns
1 small shallot , finely chopped
4 garlic cloves , finely chopped
1 fresh red chilli , halved, seeded and finely chopped
2.5cm piece of fresh root ginger , peeled and finely chopped
1 stem of lemongrass , tough outer leaves removed, finely chopped
a good handful of fresh mint leaves, finely chopped
a good handful of fresh coriander leaves, finely chopped
100ml/3½ fl oz olive oil
grated zest and juice of 1 lime

Steps:

  • Tip all the chopped ingredients into a bowl, add the olive oil along with the lime zest and juice and mix well. Set aside for 30 minutes to allow the flavours to mingle.
  • To make fragrant Thai prawns, remove heads and peel shells from 20 raw king prawns but leave tail sections on. Toss in the marinade and cook on a really hot barbecue for 45 seconds on each side until they turn from grey-blue to pink.

2 chicken breasts (cut into 1-inch square pieces)
6 garlic cloves, chopped (or more if you want it super tasty)
1 teaspoon white pepper
1 tablespoon soy sauce
1/2 teaspoon sea salt
1 tablespoon oyster sauce
1 tablespoon sugar
1/4 cup peanut oil (for frying)
lettuce leaf (for garnish)
cucumber, slices (for garnish)

Steps:

1 lb boneless pork chops (Sliced into 1/8-inch thick strips) or 1 lb pork loin (Sliced into 1/8-inch thick strips)
2 tablespoons garlic (finely chopped)
1/4 cup coriander root (finely chopped)
1 teaspoon white pepper
1/2 teaspoon salt
cooking oil (for deep frying)
3 -4 green lettuce leaves (for garnish)

Steps:

  • Grind the garlic and coriander root in a mortar or blender. If using blender, add just enough oil to aid in the grinding.
  • Spread the garlic and coriander root mixture together with salt and ground white pepper over the pork and marinate them about 2 hours at room temperature or overnight in the refrigerator.
