Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 pound ground beef
Kosher salt and freshly ground black pepper
1 teaspoon paprika
2 teaspoons Italian seasoning
1 tablespoon tomato paste
One 15-ounce can diced tomatoes
One 15-ounce can tomato sauce
1 teaspoon Worcestershire sauce
1 cup low-sodium beef broth
8 ounces cavatappi pasta
4 ounces sharp Cheddar, shredded on the large holes of a box grater (about 1 cup), plus more for serving
2 tablespoons chopped fresh parsley, plus more for serving

Steps:

  • Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
  • Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.
  • Add the diced tomatoes, tomato sauce, Worcestershire and beef broth to the beef mixture and stir, scraping up any browned bits from the bottom of the pot, to combine. Bring the mixture to a boil over medium heat. Reduce the heat to medium low and add the cavatappi. Cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes.
  • Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.

1 tablespoon olive oil
1 large onion, diced
1 pound ground beef
4 cloves garlic, minced
1 small bell pepper, diced, optional
1 tablespoon Italian seasoning
1 bay leaf
1/2 teaspoon kosher salt, or to taste
1/4 teaspoon ground black pepper, or to taste
1 1/2 cups beef broth
15 ounces tomato sauce
29 ounces diced tomatoes
1 1/4 cups (4 ounces) uncooked elbow macaroni
1 cup (4 ounces) grated mild cheddar cheese, or to taste

Steps:

  • Gather the ingredients.
  • Add the olive oil to a large Dutch oven or sauté pan and place the pan over medium-high heat. When the olive oil is hot and shimmering, add the ground beef and onion. Sauté, occasionally stirring with a spatula to break up the beef, until the meat is no longer pink, about 5 to 7 minutes.
  • Add the garlic, bell pepper (if using), Italian seasoning, bay leaf, kosher salt, and black pepper. Continue to cook, stirring, for 1 minute.
  • Add the beef broth, tomato sauce, and diced tomatoes, and bring to a boil. Cover the pan and reduce the heat to low; simmer for 20 minutes.
  • Add the macaroni to the sauce mixture and increase the heat to medium-low. Cover the pan and cook, occasionally stirring, until the pasta is tender, about 12 to 15 minutes.
  • Add the cheese and stir until melted. Taste the goulash and adjust the salt and pepper, if needed. Remove from the heat and garnish with parsley, if desired.

1 large onion
1 bell pepper
6 cloves garlic
2 tablespoons olive oil
1 ½ cups veggie broth
1 can tomato sauce
1 can crushed tomato
¼ teaspoon fresh basil
½ teaspoon crushed red pepper
3 bay leaves
salt and pepper, to taste
1 cup elbow macaroni

Steps:

  • In a large pan, saute ground beef, garlic, onions, bell pepper in olive oil until browned. Drain.
  • Add broth, tomato sauce, diced tomatoes, seasoning, bay leaves, and mix well.
  • Lower heat and cover. Cook for about 20 minutes, stirring occasionally.

2 teaspoons unsalted butter
2 medium onions, peeled and thinly sliced
2 tablespoons sweet Hungarian paprika
1 teaspoon caraway seeds
1 pound beef stewing meat, trimmed and cut into 1-inch cubes
1/4 cup all-purpose flour
2 cups beef broth, homemade or low-sodium canned
1 tablespoon fresh lemon juice
2 teaspoons salt, plus more to taste
1/4 teaspoon freshly ground pepper

Steps:

  • Melt the butter in a large pot over medium heat. Add the onions and cook, stirring frequently, until wilted, about 10 minutes. Stir in the paprika and caraway seeds and cook 1 minute more. In a bowl, toss the beef with the flour to coat well. Add the beef to the onion mixture. Cook, stirring, for 2 minutes.
  • Add 1/2 cup of the broth, stirring and scraping the bottom of the pot. Gradually stir in the remaining broth. Bring to a boil, then reduce to a slow simmer. 5 strips of bacon
1 medium onion, chopped
1 jar of pearl onions
1 1/2-2 lbs of round steak cut into cubes
Spice mix made of 1/8 cup of flour plus 1 teaspoon of each of the following: paprika, marjoram, garlic, seasoned salt, lemon-pepper
3/4 cup hearty red wine
2 cups beek stock
1 cup carrots cut in large dice
1/2 pound mushrooms
3/4 cup catsup
2 Tbsp worcestershire
pinch of dry mustard and cayenne
Roux
3 Tbsp butter
3 Tbsp flour
1 cup of stock from goulash

Steps:

  • Cut up and cook 5 strips of bacon. Remove bacon and crumble. Reserve drippings. Brown chopped onion in drippings. Remove and reserve remaining drippings. Place pearl onions, browned onion and bacon in a Dutch oven. Toss meat in a plastic bag with flour & spice mix. Brown meat in remaining drippings. Add wine to pan to deglaze. Scrape up any browned bits and add wine to Dutch oven. Add beef broth and meat. Add carrots, mushrooms, catsup, worchestershire, dry mustard and cayenne. Simmer on low for 2-4 hours until meat is fork-tender. Melt 3 Tbsp of butter in a sauce pan. Add 3 Tbsp of flour and sautee gently until flour is browned. Slowly add about 1 cup of stock from the goulash to the roux, mixing constantly. Stir mixture into the goulash to thicken the sauce.

5 strips of bacon
1 medium onion, chopped
1 jar pearl onions
1 1/2-2 lbs beef sirloin, cubed
1/2 cup seasoned flour (add paprika, marjoram, garlic, seasoned salt, pepper, basil, carroway, etc.)
3/4 cup red wine
2 cups beef broth
1 cup carrots, cut into bite-sized pieces
1/2--1 lb sliced mushrooms
3/4 cup catsup
2 T worchestershire sauce
1 t dry mustard
pinch of cayenne

Steps:

  • In a large dutch oven, brown bacon. Remove from pan, crumble, and set aside. Brown chopped onion in drippings and set aside. Brown meat in drippings. Turn onto plate and season with the seasoned flour. Add red wan to pan and deglaze pan. Add beef broth and seasoned meat. Add carrots, mushrooms, catsup, worchestershire, mustard and cayenne. Simmer for several hours. Before serving, make a roux of 1/4 cup flour and three T butter. Add to dutch oven and allow goulash to thicken for 45-60 minutes. Serve over noodles with a dollap of sour cream.
