This was my all time favorite dessert that my grandma made. Funny, considering I usually don't like any cakes made from a mix!

1 (18 ounce) package yellow cake mix
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 (16 ounce) can crushed pineapple, drained of 1/3 cup juice
1 cup brown sugar
4 tablespoons butter

Steps:

  • Melt butter in a skillet and mix in sugar and pineapple.
  • Pour pineapple mixture into a 9x13" cake pan.
  • Make cake batter as directed on box
  • Pour cake batter over and spread.
  • Bake at 350 for about 50 minutes. DO NOT OVERBAKE!

1 (20 ounce) can pineapple slices
2 tablespoons pineapple syrup or 2 tablespoons pineapple juice
1/4 cup butter
2/3 cup brown sugar
1 cup flour
3/4 cup granulated sugar
1/2 teaspoon salt
1/4 cup shortening
1 egg
1 teaspoon lemon juice
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
1/2 cup milk
maraschino cherry (optional)

Steps:

  • Drain pineapple from can and reserve 2 tablespoons of the syrup.
  • Melt the butter in a 10 inch cast iron skillet and stir in the brown sugar until well blended. Remove the skillet from the heat and arrange the pineapple slices on top of the sugar mixture. Put a cherry in the center of each slice.
  • Combine flour and baking powder. In a mixing bowl beat together the shortening and granulated sugar. Beat in the egg, lemon juice and vanilla. Beat in flour mixture and milk until batter is smooth.
  • Pour cake batter evenly over pineapple in skillet and bake at 350°F for about 40 minutes. Allow the cake to cool for about 5 minutes and then turn onto a serving plate.

8 pineapple rings
8 pecan halves
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
⅔ cup white sugar
2 eggs

This was my husband's Mom's favorite Pineapple Upsidedown Cake. I've been making it for years although I've tweaked it a little. She baked hers in an iron skillet. I bake mine in 9 inch round cake pans. Still really good! Enjoy!

1/2 cup(s) brown sugar
1 - egg
1/2 cup(s) sugar
1 cup(s) flour
1 teaspoon(s) baking powder
1/4 cup(s) evaporated milk
1 tablespoon(s) melted crisco (i use oil)
1 teaspoon(s) vanilla
8 slice(s) pineapple, drained
1 small jar of maraschino cherries

Steps:

  • Melt the butter in a pan. Add the brown sugar and stir until melted. Pour into iron skillet or baking pan.
  • Beat egg until light. Add sugar and beat well. Mix the flour and baking powder. Alternately, add flour mixture and milk to the egg/sugar mixture. Beat well and add shortening and vanilla.
