Grandma's Best Ever Banana Bread image

Grandma's Best Ever Banana Bread is my mother-in-law's famous recipe that's everything you want in a banana bread: moist, tender, delicious and slathered with a luscious cream cheese frosting.

Provided by Lise Sullivan Ode

Categories     Bread

Time 1h5m

Number Of Ingredients 14

1/2 cup unsalted butter, softened (1 stick)
1 cup granulated sugar
2 large eggs (room temperature)
1 1/2 cups all purpose flour or gluten free flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed bananas (about 3)
1/2 cup sour cream
1 teaspoon vanilla extract
1 cup chopped nuts (optional)
4 ounces cream cheese, softened
1/4 cup unsalted butter, softened (1/2 stick)
1 cup powdered sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Grease 9"x5" loaf pan. Set aside.
  • Cream butter and sugar. Add eggs. Stir to combine.
  • Whisk flour, baking soda and salt together. Add to butter mixture along with sour cream, bananas, and vanilla. Stir together until completely combined. Fold in nuts.Note: If you want to make this a gluten free recipe, it works beautifully just by substituting the same amount of gluten free flour instead of the all purpose flour and adding 1/2 teaspoon xanthan gum. I used my homemade gluten free flour blend recipe from my blog.
  • Pour batter into prepared pan. Bake for 50-55 minutes or until a toothpick inserted into the middle comes out clean. Let cool.
  • Mix together cream cheese, butter, powdered sugar and vanilla until smooth and creamy. Frost cooled banana bread. Slice and serve.

GRANDMA'S BEST EVER BANANA NUT BREAD

Grandma's Best Ever Banana Nut Bread image

This is dark, rich and moist. It is sweet and flavorful and I am told unlike any other people have tasted. Some liken it Mimi's Cafe, but say it is better. My mother, Belen, who passed away at the age of 100 had been making this for as long as I can remember. Please follow the instructions regarding putting the vinegar in the milk in one cup and the baking soda in warm water in another before mixing it with other ingredients. It makes a difference.

GRANDMA'S BANANA BREAD

Grandma's Banana Bread image

This bread recipe was from my husband's grandmother. It is so simple to make and always comes out great. The original recipe did not have the vanilla in it, but I always add it. If I have bananas that are ripe, but I am not ready to make the bread, I just plop them in the freezer, peel and all. No need to put in a bag. They will turn black, but the insides will remain good and will be perfect for the bread. Just remove from the freezer, peel and add to the mixture.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be. You can also use overripe bananas, as long as they are not too mushy.
  • Mash the bananas well: Make sure to mash the bananas until they are completely smooth. This will help to ensure that your banana bread is evenly textured and moist.
  • Use a good quality butter: The butter you use will make a big difference in the flavor of your banana bread. Use a high-quality butter that is at least 80% fat.
  • Don't overmix the batter: Overmixing the batter will make your banana bread tough. Mix the ingredients just until they are combined.
  • Bake the banana bread at the right temperature: The ideal temperature for baking banana bread is 350 degrees Fahrenheit. If you bake it at a higher temperature, the outside will be overcooked before the inside is done.
  • Let the banana bread cool completely before slicing it: This will help to prevent the bread from crumbling.

Conclusion:

Banana bread is a delicious and easy-to-make treat that is perfect for any occasion. With a few simple tips, you can make sure that your banana bread turns out perfect every time. So next time you have some ripe bananas on hand, give this recipe a try. You won't be disappointed!
