- Sprinkle chicken with cayenne and salt. In a Dutch oven, heat oil over medium-high heat. Brown chicken in batches. Remove from pan., Add sausage, onion, green pepper and celery to same pan; cook and stir over medium heat 3 minutes. Add garlic; cook 1 minute longer. Stir in tomatoes. Return chicken to pan; bring to a boil. Reduce heat; simmer, covered, until chicken juices run clear, about 1 hour., Cook spaghetti according to package directions. Remove chicken from pan. When cool enough to handle, remove meat from bones; discard skin and bones. Shred meat with 2 forks; return to pan. Bring to boil. Reduce heat; simmer, uncovered, until slightly thickened, 8-10 minutes. Skim fat. Drain spaghetti; serve with chicken mixture.

Note: you can use chicken breasts instead of the whole chicken, but you do lose some flavor that way.

Steps:
- Boil chicken in 3 qrts water til tender.
- Remove chicken, cool, bone, and cut in small bite size pieces.
- Cook spaghetti in chicken broth with the garlic salt until tender.
- Meanwhile, saute finely chopped onion, green pepper and celery in 2 tbsp margarine til tender.
- Add to cooked spaghetti.
- Stir soup, chicken, milk, 2/3 of cubed cheese and pimento into spaghetti.
- Place mixture in a large baking dish and put rest of cheese (shredded) on top.
- Cook in 350 degree oven til bubbly (about 20-30 minutes).

- Preheat oven to 350 degrees.
- Cook pasta 2 minutes short of package directions and drain.
- In large saute pan, heat oil over med/high heat and add celery and onion. Cook until softened, then add diced garlic and cook for 1 minute more.
- Add diced/shredded chicken, cream of chicken soup and peas. Stir to combine. Add the heavy cream, sour cream and 1 and 1/2 cups of the shredded cheddar cheese. Add salt and pepper to taste. Stir and heat through until starting to bubble and cheese is melted.

- Spread mixture into a 2 qt casserole dish that has been sprayed with non-stick cooking spray. Sprinkle remaining 1/2 cup (or more which I always do) on top.

- Heat oil in heavy large Dutch oven over medium heat. Add onion and garlic and sauté until onion is translucent, about 4 minutes. Add ground beef and cook until brown, breaking up with fork, about 8 minutes. Drain drippings from Dutch oven. Mix parsley, bay leaves and basil into beef and cook 2 minutes. Stir in tomatoes, water, tomato sauce and tomato paste. Simmer until reduced to sauce consistency, breaking up tomatoes with spoon, about 2 hours. Season with salt and pepper. (Can be prepared 2 days ahead. Cover and chill. Rewarm sauce over medium-low heat before using.)

My grandmother always made this recipe when she would have us over for dinner. This recipe is super easy and very delicious. The aroma of it cooking fills the house and takes me back to when I was a child. Although grandma used to cook it on the stovetop, now that she is getting older she does it in the slow cooker and it tastes just as good. If you love garlic like I do, you can place whole peeled garlic cloves between the chicken pieces and mix some mashed garlic in the sauce. This is great served with garlic bread and a salad. ENJOY!
