GRANDMA'S CRANBERRY-ORANGE GELATIN SALAD

Grandma's Cranberry-Orange Gelatin Salad image

My grandmother made this salad every Thanksgiving. It is delicious even without its creamy topping. This side dish is so yummy, I sometimes make it even when it's not Thanksgiving! Depending on your salad's shape, you can spread the topping in a layer over the Jell-O; or if you use a ring mold, put the topping in the center. Alternately, you could serve the topping in a bowl on the side, so it's optional.

GRANDMA'S CRANBERRY SALAD

I always love the punch of color that cranberries add to a meal, and this delicious cranberry salad recipe really does the berry justice. Not only did we love the perfect balance of sweet and tart, but the chopped pecans added a wonderful crunch that we'd never had before in a cranberry salad.

Number Of Ingredients 9

1 small package of cherry jell-o (3oz box)
1 cup(s) hot water
1 cup(s) sugar
1 tablespoon(s) lemon juice
1 cup(s) drained crushed pineapple (8oz can) (juice reserved)
1/2 to 1 cup(s) pineapple juice (use the reserved juice and add water to make 1/2 -to 1cup of liquid)
1 cup(s) ground cranberries
1 - orange (ground)
1/2 cup(s) pecans, chopped

Steps:

  • Boil the cup of water. Dissolve the Jell-o in the hot water in an 8-inch square pan mix well. Add the sugar, lemon juice, and pineapple juice. Stir to dissolve well. Note: You can substitute the 8x8 dish and use a 9x13 dish, it seems to gel up a bit better that way.
  • Add the remaining ingredients and mix. Chill overnight.
  • Grandma's Notes: Chop up the pecans first before getting the blender wet. Or you could just buy pre-chopped pecans and save a step. Use the blender or food processor to chop up cranberries, then orange, seeded, and partially peeled. The chopped peel gives it that special zing!

Tips:

  • Use fresh cranberries for the best flavor and texture. Frozen cranberries can also be used, but they should be thawed before using.
  • If you don't have any orange juice on hand, you can substitute lemon juice or pineapple juice.
  • Add a splash of almond extract or rum extract for a richer flavor.
  • Garnish the salad with fresh mint or rosemary for a festive touch.
  • Serve the salad chilled for the best flavor.

Conclusion:

Grandma's Cranberry Jello Salad is a classic holiday dish that is always a crowd-pleaser. It is easy to make and can be tailored to your own taste preferences. Whether you like it tart or sweet, with or without nuts, this salad is sure to be a hit. So next time you're looking for a refreshing and festive salad to serve at your next gathering, give Grandma's Cranberry Jello Salad a try.
