12 ounces ground turkey
1 medium sweet red pepper, chopped
1 small sweet yellow pepper, chopped
1/3 cup chopped onion
3 garlic cloves, minced
1-1/2 cups salsa
1/2 cup canned kidney beans, rinsed and drained
2 teaspoons chili powder
1 teaspoon ground cumin
8 cups torn romaine
2 tablespoons fresh cilantro leaves
Optional toppings: chopped tomatoes, shredded cheddar cheese and crushed tortilla chips

Steps:

  • In a large skillet, cook turkey, peppers, onion and garlic over medium heat 6-8 minutes or until turkey is no longer pink and vegetables are tender, breaking up turkey into crumbles; drain., Stir in salsa, beans, chili powder and cumin; heat through., Divide romaine among four plates. Top with turkey mixture; sprinkle with cilantro and toppings of your choice. Serve immediately.

1 pound ground turkey
1 (1.25 ounce) package taco seasoning mix
1 (15 ounce) can black beans, rinsed and drained
1 head iceberg lettuce, shredded
2 tomatoes, diced
1 (10 ounce) bag tortilla chips, coarsely crumbled
1 (8 fluid ounce) bottle thousand island dressing

Steps:

  • Heat a large skillet over medium-high heat, and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Mix in taco seasoning mix as directed on package. Remove from heat.

1 lb lean ground beef
taco seasoning
2 -3 cups of cubed cheese
1 (14 ounce) can kidney beans
1 (16 ounce) bag nacho cheese flavor Doritos
1 (24 ounce) bottle thousand island dressing
1 (12 ounce) bag your choice lettuce (recomend no veggies)
sliced olive

Steps:

  • In large skillet, brown hamburger on medium-high heat; add in taco seasoning as it cooks.
  • Chop cheese in small squares.
  • Place lettuce on individual plates.
  • Drain the kidney beans and the olives.
  • Put a fair amount of meat over lettuce on each plate, top with kidney beans, olives, and last but not least a small handful of cheese. Crunch some doritos with your hand and place on top of each salad.
  • Serve with thousand island dressing.
