GRANDMA'S GNOCCHI

My grandmother used to make these when I was a little girl. When I was old enough to realize that I needed to get her delicious recipes, she showed me how to make a lot of her wonderful dishes. She never wrote anything down and she rarely used a cookbook. She also didn't measure things the same each time, so sometimes you have to add a little to the recipes.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the gnocchi will be. Use fresh potatoes, flour, and eggs.
  • Cook the potatoes properly: The potatoes should be cooked until they are tender but not mushy. If they are overcooked, the gnocchi will be too soft and mushy.
  • Don't overwork the dough: The dough should be worked just enough to come together. Overworking the dough will make the gnocchi tough.
  • Use a light touch when shaping the gnocchi: Don't press too hard on the dough, or the gnocchi will be dense. Just gently roll the dough into small balls.
  • Cook the gnocchi in plenty of boiling water: The gnocchi should be cooked in a large pot of boiling water. This will prevent them from sticking together.
  • Don't overcrowd the pot: Cook the gnocchi in batches if necessary. Overcrowding the pot will cause the gnocchi to stick together and cook unevenly.
  • Serve the gnocchi immediately: Gnocchi is best served immediately after it is cooked. However, you can also store cooked gnocchi in the refrigerator for up to 3 days.

Conclusion:

Gnocchi is a delicious and versatile dish that can be enjoyed in many different ways. Whether you serve it with a simple sauce or a hearty stew, gnocchi is sure to be a hit. So next time you're looking for a new and exciting dish to try, give gnocchi a try. You won't be disappointed!
