- In a medium saucepan, melt the butter. When it is melted, add the onion and garlic, and stir to combine. Cook for 1 minute.
- Add the flour, and cook for another minute, stirring often.
- Whisk in salt and then the milk, and cook for one more minute until the mixture thickens.
- Remove from the heat, and stir in the sour cream.
- Add the rinsed green beans to the pan, and gently stir to combine.
- Place the green bean mixture in the bottom of the 2.5-quart baking dish (this can be a 9-inch square, a 9-inch round, or other similar-sized oval dishes).
- Add the cracker crumbs and melted butter to a small bowl, and stir to combine.
- Sprinkle the cracker crumbs over the green bean mixture.
- Bake for 30 minutes or until the mixture is hot and the cracker crumbs are golden-brown.
- Serve hot.

- Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
- Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
- Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.

- Mix the Soup, Milk, Sour Cream, Garlic & pepper. Fold in the Green Beans.
- Mix the Bread Crumbs & melted Butter together in a seprate bowl.
- Using 1/3 of the Green Bean mix, spread into a thin layer, add 1/3 of the Bread Crumbs & sprinkle with 1/3 of the cheese. Continue to layer with the Bread Crumbs & cheese on top.
- Bake loosely covered for 15 to 20 minutes on 350, then uncover & add the french-fried onions & bake approximately another 5 or 10 minutes. (caerfull to not burn onions).
- This can be made ahead & stored overnight in the fridge (without the fried onions but may have to cook another 5 minutes longer). Use an 9x9 pan unless you double the recipe then you can use a 9x13.
- My son now makes this for both Thanksgiving & Christmas dinners, he said he makes an average of 8 casseroles due to demands for holiday parties & family gatherings.

- Add dry beans to a bowl, cover with water, and let soak for 8 hours, or overnight.
- Drain beans and transfer to a large pot filled with 3 quarts of cold, fresh water. Add bay leaf, pork shoulder, and onion. Bring to a simmer over high heat. Reduce heat to medium-low and stir. Skim off foam if desired. Let simmer until beans are just tender, about 1 hour.
- While beans simmer, combine barbecue sauce, ketchup, vinegar, brown sugar, molasses, mustard, Worcestershire, smoked paprika, cayenne, black pepper, kosher salt, and garlic powder in a bowl with a whisk. Set aside until needed.
- Preheat the oven to 350 degrees F (175 degrees C).
