2 tablespoons olive oil
2 cups sliced onions
1 teaspoon salt, divided
1/4 teaspoon pepper
2 cups all-purpose flour
3 teaspoons baking powder
5 tablespoons shortening
2/3 cup 2% milk
1 large egg, room temperature
3/4 cup sour cream

Steps:

  • Preheat oven to 400°. In a large skillet, heat oil over medium heat. Add onions; cook and stir until softened, 8-10 minutes. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally. Stir in 1/2 teaspoon salt and the pepper., Meanwhile, in a large bowl, combine flour, baking powder and remaining 1/2 teaspoon salt. Cut in shortening until mixture resembles coarse crumbs. Stir in milk just until moistened. Press into a greased 9-in. square baking pan; top with onions., Combine egg and sour cream; spread over onion layer. Bake until golden brown, 35-40 minutes. Cut into squares. Serve warm.

1/2 lb fresh mushrooms
2 -3 medium onions, sliced
1/2 cup butter, plus more for bread
1/2 lb swiss cheese, grated
4 -6 slices French bread, each 1/2 to 3/4 inch thick
1 can cream of chicken soup
1/2 cup milk
2 teaspoons soy sauce

Steps:

  • In frying pan, saute mushrooms and onions in butter over medium heat until soft.
  • Place in bottom of a 9 x 13 inch glass baking dish.
  • Sprinkle grated cheese on top of onion-mushroom mixture.
  • Butter bread slices and place on top of cheese, allowing about 1 slice per serving.
  • Mix soup, milk and soy sauce together and pour over bread, making sure all the bread is covered.
  • Bake at 350° F.

3 tablespoons butter
3 large onions, sliced thin
8 ounces fresh mushrooms, sliced
4 ounces shredded swiss cheese
1 (10 3/4 ounce) can cream of mushroom soup
1 (5 ounce) can evaporated milk
2 teaspoons soy sauce
8 slices of 1/2 inch thick French bread
8 ounces sliced swiss cheese

Steps:

  • Preheat oven to 375 degrees.
  • Melt butter over medium heat and saute onions and mushrooms until soft.
  • Place in 12x7 baking dish.
  • Sprinkle shredded swiss cheese on top.
  • Combine soup, evaporated milk and soy sauce mixing well.
