GRANDMA'S RUSSIAN TEA

Grandma's Russian Tea image

I grew up drinking this tea at my grandmother's house. I now fix it at my house on really cold days, when I am sick (lots of vitamin C!), and at Christmas. It is perfect to let simmer on the stove to make the house smell good and to serve to guests. I have no idea why its called 'Russian' tea; that is just what my grandmother always called it. Use any tea you like. I've used regular black tea, decaf, and cinnamon spice, and it's all great. If using spiced tea, you may want to adjust the amount of cinnamon, cloves, and allspice. This is also great reheated!

Time 2h

Yield 48 cookies

Number Of Ingredients 7

5 sticks unsalted butter, at room temperature
4 1/2 cups (20 ounces) all-purpose flour
1 1/2 cups (7 1/2 ounces) sifted powdered sugar, plus more for rolling cookies
1 tablespoon kosher salt
2 teaspoons pure vanilla extract
1/2 tablespoon ground cinnamon
1 1/2 cups toasted walnuts, finely chopped

Steps:

  • First, brown the butter: Place the butter in a medium saucepan over low heat to cook. Check it after about 7 minutes; it should be a medium-brown color, not too light but not too burnt. Once it reaches that color, take it off the heat and let it cool. Refrigerate to continue to cool for about 30 minutes.
  • Preheat the oven to 350 degrees F. Line 3 half sheet pans with parchment paper.
  • Add the cold browned butter, flour, powdered sugar, salt, vanilla extract and cinnamon to a food processor; process until light and fluffy. Transfer to a large bowl. Add the walnuts and mix with a rubber spatula until combined.
  • Using a small ice cream scoop, portion 48 mounds of the dough onto your prepared sheet pans, spacing them 2 inches apart. Place in the freezer to cool for 15 minutes.
  • Bake until the cookies are firm and smell nutty and toasty, 15 to 18 minutes. Rotate the pans 180 degrees halfway through baking.
  • Meanwhile, place additional powdered sugar in another large bowl. Once the cookies are out of the oven, let cool for exactly 6 minutes 30 seconds then toss in the powdered sugar. Enjoy!

MAMA'S OLD-FASHIONED RUSSIAN TEA

Mama's Old-Fashioned Russian Tea image

Our instant Russian Tea mixes with Tang and instant tea powder are good, but nothing can compare to coming in to the wonderful aroma of this old-fashioned beverage as it simmers on the stove! It brings back special memories of Christmas time when I was a child and this was our "special holiday treat" during World War II.

Time 40m

Yield 20-30 serving(s)

Number Of Ingredients 8

1 gallon water
15 whole cloves
6 cinnamon sticks
4 regular-size tea bags
2 cups orange juice
2 cups pineapple juice
1 cup lemon juice
2 cups sugar

Steps:

  • Boil water with cloves and cinnamon sticks for 20 minutes in large non-aluminum pot.
  • Remove from heat, add the tea bags and cover.
  • Allow mixture to"steep" for at least 4 hours, preferably overnight.
  • After steeping process is completed, combine in another sauce pan the orange, pineapple, and lemon juices with the sugar.
  • Heat gently, stirring to melt and mix the sugar.
  • Drain spices from tea mixture.
  • Combine the tea and juice mixtures.
  • Heat and enjoy!
  • NOTE: Preparation time does not include"steeping time".

Tips:

  • Use loose leaf tea: Loose leaf tea provides a more flavorful and aromatic cup of tea compared to tea bags.
  • Steep the tea properly: The ideal steeping time for black tea is 3-5 minutes, while green tea should be steeped for 1-2 minutes. Over-steeping can result in a bitter taste.
  • Add milk and sugar to taste: Milk and sugar can enhance the flavor of tea, but they are optional. If you prefer a sweeter tea, use honey or maple syrup instead of sugar.
  • Serve the tea hot or cold: Russian tea can be enjoyed hot or cold. If you are serving it cold, let it cool completely before refrigerating.
  • Garnish the tea with lemon or fruit: A slice of lemon or a sprig of mint can add a refreshing touch to your cup of tea.

Conclusion:

Grandmas Russian tea is a delicious and versatile beverage that can be enjoyed on any occasion. Whether you prefer it hot or cold, with milk and sugar or plain, there is a Russian tea recipe out there for everyone. So next time you are looking for a warm and comforting drink, give this classic tea a try.
