2 1/2 lbs london broil beef
1/2 cup olive oil
1/2 cup low sodium soy sauce
1/4 cup honey
3 tablespoons chopped fresh rosemary or 1 tablespoon dried rosemary
1 1/2 tablespoons fresh coarse ground black pepper
1 teaspoon salt
6 garlic cloves, minced

Steps:

  • Score the meat on both sides by making shallow, diagonal cuts 1/4-inch deep at 1-inch intervals, forming a diamond pattern.
  • Place meat in a shallow dish or zip-top bag.
  • Combine oil, soy sauce, honey, rosemary, pepper, salt and garlic.
  • Pour marinade over meat, tossing to coat.
  • Cover or seal; refrigerate several hours or overnight.
  • Remove meat from refrigerator and let come to room temperature for 30 minutes.

10-ounce grass-fed London broil
2 cloves garlic
1 sprig rosemary
2 teaspoons sherry vinegar
Pinch of salt
Olive oil

Steps:

  • Preparation ~ Trim the leaves from the rosemary, peel the garlic and place both ingredients in a food processor. Add the sherry vinegar and salt and pulse until the garlic and rosemary are finely chopped. Add in just enough olive oil to form a paste. Spread on both sides of the steaks and marinate for a minimum of two hours, preferably overnight. Preheat broiler or heat a grill to medium-high. Broil or grill steak about 3 minutes per side for medium-rare, or longer if desired. Let steak rest for 5 to 7 minutes and then slice thinly against the grain. Recipe Notes ~ Grass-fed beef needs about 30% less cooking time than grain-fed beef and for best results should be served rare or medium rare.

1/4 cup honey
3 tablespoons vegetable oil
3 tablespoons Worcestershire sauce
1 tablespoon reduced sodium soy sauce
1 lime, juice of
2 teaspoons bottled minced garlic
1 teaspoon onion powder
2 -2 1/2 lbs flank steaks

Steps:

  • Pour the honey into a 2-cup glass measure. Microwave the honey, uncovered, at high, 30 seconds to make it pour easily.
  • Remove the measure from the microwave and add the oil, Worcestershire sauce, soy sauce, lime juice, garlic and onion powder. Whisk to blend well.
  • Place the meat in a gallon-size zipper-top plastic bag. Whisk the marinade once more and pour it over the meat. Seal the bag and turn the bag several times to cover the meat with marinade. Refrigerate 8 to 24 hours, turning the bag at least once, if possible.
  • Turn on a gas grill to medium high.
  • Remove the meat from the marinade and discard the marinade. Grill the meat, covering the grill to the desired doneness, 7 to 10 minutes per side for medium-rare, depending on the thickness. Do not overcook.
  • Remove from the grill and slice across the grain. Serve at once, or let stand until ready to serve. Refrigerate leftovers, covered, up to 3 days.
