RAW BEET SALAD
This is a beet recipe for someone who is skeptical of their earthy, rooty flavor. Uncooked beets are less sweet and earthy than they are when boiled or roasted. This is a messy affair, so peel and grate them near the sink.

RAW BEET SALAD
I was looking for a way to use raw beets and found a recipe online. I changed it a bit to use ingredients that I grow and use. It's so yummy and is so nutritious because the nutrition isn't cooked out of the beets. Everyone that has tried it, likes it. It's better if let set for a few hours but doesn't have to be. Serve for a cold lunch with boiled eggs on a bed of lettuce.

GLAZED BEETS
My grandmother used this recipe to get us little vegetable haters to eat our beets! Her special dish made beets taste nearly as good as candy. With the tart-sweet scent of Glazed Beets in the air, it never took us long to jump down from the climbing tree out back when we were called to dinner.

Tips:
- Selecting the Right Beets: Choose beets that are firm and have smooth, unblemished skin. Avoid beets with cuts, bruises, or signs of wilting.
- Peeling and Grating Beets: To peel beets easily, hold them under running water and use a sharp knife to scrape away the skin. Use a box grater to grate the beets, starting from the root end.
- Balancing Flavors: Grated beets pair well with a variety of flavors. Acidic ingredients like vinegar or lemon juice can brighten the earthy taste of beets, while sweet ingredients like honey or maple syrup can add a touch of sweetness.
- Adding Texture: Grated beets can add a delightful crunch to salads, slaws, and grain bowls. They can also be roasted or pan-fried for a tender, caramelized texture.
- Storing Grated Beets: Store grated beets in an airtight container in the refrigerator for up to 5 days. You can also freeze grated beets for up to 3 months.
Conclusion:
With their vibrant color, earthy flavor, and versatility, grated beets are a welcome addition to any kitchen. Whether you're using them in salads, slaws, soups, or baked goods, grated beets offer a unique combination of taste and texture that will elevate your culinary creations. So next time you're looking for a nutritious and delicious ingredient to add to your meals, reach for a bunch of beets and start grating!
