1 pound chicken tenderloins
2 medium tomatoes, sliced
1 cup sliced fresh mushrooms
1/2 cup chopped onion
1 tablespoon capers, drained
1 tablespoon lemon-pepper seasoning
1 tablespoon salt-free Greek seasoning
1 medium garlic clove, minced
1/2 cup water
2 tablespoons chopped ripe olives
Hot cooked orzo pasta, optional

Steps:

  • In a large skillet, heat 2 teaspoons oil over medium heat. Add chicken; saute until no longer pink, 7-9 minutes. Remove and keep warm., In same skillet, heat remaining oil; add the next 6 ingredients. Cook and stir until onion is translucent, 2-3 minutes. Stir in garlic; cook 1 minute more. 1 garlic clove, minced
1/2 teaspoon dried oregano
4 ounces multigrain thin spaghetti
1 jar (7-1/2 ounces) marinated quartered artichoke hearts, drained and coarsely chopped
2 cups fresh baby spinach
1/4 cup roasted sweet red pepper strips
1/4 cup sliced ripe olives
1 green onion, finely chopped
2 tablespoons minced fresh parsley
1/2 teaspoon grated lemon zest

2 broiler/fryer chickens (2-1/2 to 3 pounds each), cut up
1 cup lemon juice
1 teaspoon garlic salt
1 teaspoon pepper
1 teaspoon dried oregano
4 teaspoons seasoned salt
POTATOES:
1/2 cup finely chopped onion
5 cups sliced unpeeled red potatoes (about 3 pounds)
4 cups water
1/2 cup butter, melted
1/4 cup lemon juice
1 teaspoon chicken bouillon granules
1/2 teaspoon each paprika, salt, pepper and dried oregano
