1 (16 ounce) package bow-tie pasta (farfalle)
1 (12 ounce) bag broccoli florets
1 (10 ounce) basket cherry or grape tomatoes
1 bunch green onions, sliced
½ cup chopped celery
½ red bell pepper, chopped
½ green bell pepper, chopped
2 cups creamy salad dressing (such as Miracle Whip®)
⅓ cup grated Parmesan cheese
¼ cup white sugar
½ teaspoon dried basil
½ teaspoon salt

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook the bow-tie pasta at a boil until tender yet firm to the bite, about 12 minutes; drain.
  • Quickly rinse the cooked pasta in cold water to stop it from continuing to cook; drain.
  • Mix the cooled pasta, broccoli, tomatoes, sliced green onions, celery, red bell pepper, and green bell pepper in a large bowl.
  • Gently stir the salad dressing, Parmesan cheese, sugar, basil, and salt in a bowl until evenly mixed.
  • Pour the salad dressing mixture over the pasta mixture; gently toss to coat evenly.
  • Refrigerate 3 hours to overnight before serving.

1 lb bowtie pasta
12 oz roasted red peppers (cut into 1-inch strips (about 2 whole peppers))
1 cup pitted kalamata olives (6 oz jar)
1 pint grape tomatoes (halved lengthwise)
12 oz pepperoncinis (sliced into rings, seeds removed (about 2/3 cup))
1 cup feta cheese crumbles (2 tbsp reserved)
1/4 cup red wine vinegar
2 tbsp lemon juice
1 tsp dijon mustard
1/2 tsp onion powder
1/2 tsp pepper
1/2 tsp kosher salt
1 tsp oregano
1 tsp basil
2 cloves garlic (minced)
1 tsp sugar
2 tbsp feta cheese crumbles
1/2 cup olive oil

Steps:

  • Cook pasta according to package directions. Drain and rinse under cold water.
  • Meanwhile, prepare the dressing. Combine ingredients from vinegar through feta cheese crumbles and mix thoroughly. I use my handheld milk frother for this but you can whisk it too. Then, while whisking, slowly drizzle in olive oil. Alternately, combine all dressing ingredients in a jar or bottle and shake to combine.
  • Combine all pasta salad ingredients in a large bowl. Top with dressing and toss to thoroughly combine.

1 lb bow tie pasta, uncooked
1 tablespoon olive oil
1 lb chicken, breast chopped in slivers
3 garlic cloves, crushed
1/2 cup red onion, diced
1 (14 ounce) can marinated artichoke hearts, chopped
1 tomatoes, chopped
1/2 cup feta cheese, crumbled
3 tablespoons parsley, fresh chopped
2 tablespoons lemon juice, fresh
1 teaspoon oregano
1/2 cup button mushroom
1/2 cup oil-and-vinegar dressing
1/4 black olives, pitted chopped, Greek ones if you have them
1 cucumber, peeled and grated

Steps:

  • Cook pasta to al dente; drain.
  • Heat olive oil; cook chicken and garlic (you can use my Greek seasoning mix on the chicken).
  • Add to pasta.
  • Add red onions, artichoke hearts with the liquid, tomato, feta cheese, parsley, lemon juice, oregano, button mushrooms, oil and vinegar dressing, olives, and cucumber.
  • Season to taste; you may need additional vinaigrette dressing.

2 cups penne pasta
¼ cup red wine vinegar
1 tablespoon lemon juice
2 cloves garlic, crushed
2 teaspoons dried oregano
salt and pepper to taste
⅔ cup extra-virgin olive oil
10 cherry tomatoes, halved
1 small red onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
½ cucumber, sliced
½ cup sliced black olives
½ cup crumbled feta cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Rinse with cold water and drain well in a colander set in the sink.
  • Whisk together the vinegar, lemon juice, garlic, oregano, salt, pepper, and olive oil. Set aside. Combine pasta, tomatoes, onion, green and red peppers, cucumber, olives, and feta cheese in a large bowl. Pour vinaigrette over the pasta and mix together. 1/3 cup lemon juice (probably about one lemon's worth)
1 tablespoon anchovy paste
2 garlic cloves, minced
1 teaspoon dried oregano leaves, crumbled

1 English cucumber, diced
2 cups small cherry tomatoes
2 cups good quality black olives, pitted
1 cup chopped red onion
1/2 cup chopped fresh parsley
