1-2 heads romaine lettuce, chopped
1 pint grape or cherry tomatoes, halved
1 cucumber, peeled and sliced
1/4 cup red onion, thinly sliced
20 manzanilla olives
1/2 cup feta cheese, crumbled
1/4 cup olive oil
3 tbsp lemon juice
1 tsp sugar
1 1/2 tsp dijon mustard
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp oregano

Steps:

  • In a large salad bowl combine lettuce, tomatoes, cucumbers, onions, olives and feta cheese.
  • To make the dressing, combine all of the dressing ingredients in a container with a lid. Shake for about 2-3 minutes to combine ingredients.
  • Just before serving, pour dressing over salad and toss to coat.

6 pitted ripe or Greek olives
1 green onion, thinly sliced
DRESSING:
2 tablespoons lemon juice

1 garlic clove, minced

1 teaspoon water
1/2 teaspoon minced fresh mint or 1/8 teaspoon dried mint

12 kalamata olives, pitted and quartered
1 (15 ounce) can garbanzo beans, rinsed and drained
3/4 cup grape tomatoes or 3/4 cup halved cherry tomatoes
1/4 cup feta cheese, crumbled
3 cups mixed salad greens, torn
1/4 cup red wine vinegar
